Pea Soup
To prepare a delicious vegetable soup, it is essential to have the right ingredients and to follow the necessary steps to achieve a savory result. We start by ensuring we have all the ingredients at hand, and the quantities may vary depending on the desired servings. This recipe is versatile and can easily be adapted to make cauliflower or kohlrabi soup, according to preference.
The first step in the cooking process is to take care of the vegetables. In a large pot, we heat a little oil over medium heat. Once the oil is hot, we add finely chopped carrots, which, through the heat, will release not only color but also their natural sweetness. They should be sautéed until they become slightly golden, at which point we can add the bell pepper, cut into cubes. It’s time to add 2-3 teaspoons of vegeta, which will enhance the flavors and give a pleasant taste to our soups. After mixing well, we let the vegetables cook together for a few minutes.
The next step is to add the finely chopped onion and peas, both essential ingredients to give the soup a rich flavor. We continue to sauté the vegetables for a few minutes, stirring occasionally to prevent them from sticking to the bottom of the pot. Once the vegetables start to soften, we pour in water until they are completely covered. We add salt to taste and let the soup simmer over medium heat until the vegetables become tender.
While the vegetables are cooking, we can prepare the dumplings. We take a fresh egg and beat it in a bowl, gradually adding flour until we obtain a homogeneous composition, but not too dense. Using a teaspoon, we break off small portions of this mixture and add them directly to the soup. We let the dumplings boil for about 7-10 minutes. At the end, we season the soup with freshly ground pepper and add finely chopped greens, such as parsley or dill, for an extra touch of freshness.
If desired, you can enhance the soup with a spoonful of sour cream in the bowl, giving it a creamy and rich taste. Also, if you prefer a more sour taste, you can add a little lemon juice or vinegar to taste.
