Ingredients:

For the soup:
- 750 grams of beef or pork (for soups)
- 300-400 grams of minced meat (preferably a mix of pork and beef)
- 2 large carrots
- 1 celery root (about 150 grams)
- 2-3 medium onions
- 1 parsnip (optional)
- 1-2 large potatoes
- A handful of green beans, chopped
- 1 can of peeled tomatoes (400 ml) or fresh peeled tomatoes
- 50 grams of rice
- 1 egg
- 1 tablespoon of vegetable Delikat (or finely chopped dehydrated vegetables)
- Salt and pepper, to taste
- 2 bay leaves
- Magic Borscht to sour the soup (or to taste)
- Fresh herbs (preferably green celery and lovage)

Preparation:

1. Preparing the meat and vegetables: Start by cutting the beef or pork into medium-sized cubes. This step is essential as smaller cubes will cook more evenly. You can choose to use pork for a richer taste, and the mix with beef will add an extra layer of flavor.

2. Boiling the soup base: Add the chopped meat and vegetables (carrots, celery, parsnip, 2 onions) into a pressure cooker, along with 2 bay leaves, salt, pepper, and a bit of vegetable Delikat. Cover with water and boil for 30 minutes, starting the timer when steam begins to escape. Using a pressure cooker will significantly reduce cooking time and concentrate the flavors.

3. Preparing the meatballs: Meanwhile, in a bowl, mix the minced meat with an egg, 50 grams of rice, a bit of vegetable Delikat, salt, pepper, and some finely chopped herbs (such as parsley or dill). If the mixture is too soft, add a bit of breadcrumbs. Let the mixture sit in the refrigerator for 30 minutes to firm up and blend the flavors.

4. Finalizing the soup: After the meat and vegetables have boiled, open the pressure cooker and strain the soup into another pot, keeping the cooked meat and vegetables. Grate a carrot, use a blender to puree the vegetables, and add them back into the pot with the meat. Add the peeled tomatoes (fresh or canned) and boil again.

5. Adding the final ingredients: When the soup is boiling, add the diced potatoes and green beans. After about 5 minutes, add the meatballs, shaped with wet hands, into the pot using a spatula. Cover the pot and let it simmer on low heat for 15 minutes, during which the meatballs and potatoes will cook.

6. Souring and serving: Finally, sour the soup to taste with Magic Borscht or lemon juice. Add finely chopped fresh herbs for an extra layer of flavor. This soup is served hot, alongside a slice of fresh bread or polenta.
