Bean soup is a traditional Romanian dish, full of flavor and nutrients, perfect for cool days. We start by choosing the beans, an essential step that can influence the final taste of the dish. The beans are carefully selected, eliminating damaged or unsuitable ones. After selecting the beans, they are washed in several waters to remove impurities and ensure thorough cleaning. Then, the beans are soaked overnight, an important step that helps reduce cooking time and improve digestibility.

In the morning, we prepare a large pot and put the beans to boil. For 500 grams of beans, we add about 3 liters of water, enough to cover the beans well. We let the beans boil over medium heat, stirring occasionally to prevent sticking. When the beans are almost cooked, we add a grated carrot, a finely chopped onion, and a diced bell pepper. These vegetables not only enrich the flavor of the soup but also add a splash of color. Finally, we season with salt to taste and add two teaspoons of vegetable Delikat to intensify the flavors.

Once the beans and vegetables are cooked, we take care of preparing a delicious sauce that will complement the soup. In a separate pan, we sauté a chopped onion until it becomes golden and translucent. Over the onion, we add a can of diced tomatoes and let it boil for a few moments so that the flavors blend harmoniously. This combination of onion and tomatoes is then poured over the bean soup, adding an extra layer of flavor.

After adding the sauce, we let the soup boil for another five minutes, then take it off the heat. It's time to focus on decoration! The soup is served hot, garnished with fresh greens, such as parsley or dill, which add a note of freshness. Don't forget the crunchy croutons, which provide a pleasant texture, and the seasonal pickles, which perfectly complement this delicious dish.
