Risotto with Strawberries
To prepare a delicious strawberry risotto, we start by making a savory vegetable broth. In a pot, we add some celery, a medium onion diced, and a peeled and sliced carrot. These vegetables will give a special flavor to the broth, which will serve as the base for the risotto. We boil the vegetables in water with a little salt, letting them simmer on low heat until they become tender.
In a saucepan, we heat a drizzle of olive oil, enough to cover the bottom of the pan. Here, we add the rice, stirring constantly to lightly toast it until it becomes translucent. At this point, we add half a teaspoon of turmeric, which will give a beautiful color to the risotto. We deglaze the rice with white wine, allowing it to evaporate so that the flavors concentrate.
After the wine has evaporated, we begin to gradually add the previously prepared vegetable broth, stirring gently to prevent the rice from sticking to the bottom of the pan. It’s important to add the broth in small amounts, allowing the rice to absorb the liquid gradually. After a few minutes, when the rice grains start to swell, we add the strawberries that we previously pureed with a horizontal mixer to achieve a fine puree. We continue to add broth and strawberry puree until the rice is cooked al dente.
When the risotto is nearly ready, we turn off the heat and taste to adjust the salt if necessary. We add a small amount of butter and grated pecorino cheese, stirring gently to achieve a creamy texture. We let the risotto rest for two minutes so that the flavors integrate perfectly.
To serve, we ensure that each portion of risotto is topped with a fresh strawberry placed on top and sprinkle a little poppy seed, which will add a crunchy note and a pleasant contrast of textures. It is important to choose fresh strawberries, making sure they still have the stem attached, a sign that they are fresh and tasty.
