We start with the zucchinis, which we peel and cut into evenly thick slices, about one centimeter. After cutting all the slices, we sprinkle salt over them and let them drain for about 20-30 minutes. This process will help remove excess water and enhance the flavor of the zucchinis.

While the zucchinis are draining, we prepare the white sauce. For this sauce, we melt butter in a pan over medium heat, add flour, and lightly sauté it, stirring constantly until it becomes slightly golden. It is essential not to let it burn, as this will affect the taste of the sauce. Once the flour has taken on a pleasant hue, we extinguish the mixture with 3 tablespoons of yogurt, stirring continuously to avoid lumps.

We leave the sauce on the heat for a few minutes, stirring continuously, and season it with salt and pepper to taste.

Now that the sauce is ready, we prepare an ovenproof dish that we generously grease with butter. We begin to layer a stratum of drained zucchinis, ensuring that the slices overlap slightly and that the edges of the dish are covered as well. Over this first layer of zucchinis, we pour half of the white sauce, leveling it evenly. We continue with another layer of zucchinis, followed by the rest of the sauce.

To finish the dish, we lightly beat the eggs with the remaining yogurt and pour this mixture on top, spreading it evenly. We generously sprinkle grated cheese on top to achieve a delicious crust. We preheat the oven to 180 degrees Celsius and place the dish inside, allowing it to bake for 35-45 minutes or until the top is beautifully browned and a tasty crust forms.
