In a deep pan, we heat a generous amount of oil, enough to sauté the diced onion. Its aroma will quickly spread throughout the kitchen, bringing a sense of warmth and familiarity. Once the onion becomes translucent and starts to brown slightly, we add the peeled and finely chopped tomatoes. It is important to choose ripe, flavorful tomatoes, as they will provide a special taste to the stew.

Next, we take care of the bell pepper. It is cleaned of the stem and inner ribs, which can give a spicier taste. Cut into long strips of 1-2 cm, the pepper is added to the pan over the onion and tomato mixture. Now is the time to season, adding salt to taste. The next step is to introduce some sausages, cut into quarters, which will add a note of flavor and extra texture to the dish.

We cover the pan with a lid, letting the vegetables steam in their own juice. We simmer over moderate heat for about 20 minutes, taking care to check the consistency of the vegetables. It is essential that they are not overcooked, as the pepper will start to peel, and the stew will lose its beauty. When the vegetables become soft enough, we divide the mixture into two equal parts.

In one of the halves, we add two lightly beaten eggs, carefully mixing to avoid crushing the vegetables. The result is a creamy and delicious stew that can be served on a plate, like any other dish, or spread on a slice of fresh bread. These are the ideal options for enjoying this dish fresh.

If you want to preserve this stew for winter, it is recommended to steam only the tomatoes and pepper, reserving them to be placed in clean jars. These jars are sealed airtight and sterilized to prevent bacterial growth. In winter, when we want to enjoy the taste of this stew, we sauté two onions in oil, add the vegetables from the jar, and half a sausage for extra flavor. Finally, we introduce 1-2 eggs, depending on the size of the jar, and mix everything carefully.

The dish is served hot, as is, being a true delight on cold days. Enjoy your meal!
