To prepare a delicious vegetable dish with rice, start by gathering the necessary ingredients. You will need carrots, bell peppers, zucchini, onion, and fresh tomatoes, but you can also add other favorite vegetables like eggplant or peas. Make sure all the vegetables are fresh, as the final taste of the dish depends on the quality of the ingredients.

The first step is to wash the vegetables under a stream of cold water to remove any impurities. After washing, peel the carrots and onion, leaving the rest of the vegetables unpeeled if you prefer to keep the nutrients. Cut the vegetables into uniform-sized pieces for even cooking. For example, slice the carrots into thin rounds, dice the bell peppers, and cut the zucchini into half-moons.

In a large skillet or pot, add a splash of olive oil and heat it over medium heat. When the oil is hot, add the chopped onion and sauté until it becomes translucent. Then add the carrots and bell peppers, allowing them to sauté for a few minutes until they soften. Continue with the zucchini and any other vegetables you have chosen, stirring occasionally.
