To prepare a delicious and comforting salad, we start by washing and peeling the potatoes. They are boiled in salted water until tender but not too soft, so they keep their shape. Once boiled, we remove them from the water and let them cool. Then, we cut them into equal-sized cubes to ensure an even texture in the salad.

Next, we focus on the vegetables we want to include. This can be carrots, celery, bell peppers, or cucumbers, all cut into cubes similar in size to the potatoes. Also, don’t forget to add cubes of cheese, which will provide creaminess and a savory taste. Once all the ingredients are prepared, we place them in a large bowl and season with salt and lemon juice to enhance the flavors.

For the dressing, we mix store-bought soy cream with yogurt, creating a slightly tangy and lighter combination than classic mayonnaise. This alternative not only improves the salad's texture but also adds a unique taste, less heavy. We mix the dressing with the vegetables and potatoes, ensuring everything is well coated, so each bite is an explosion of flavors.

After we have made the mixture, we cover the bowl with plastic wrap and let it chill for about an hour. This resting time allows the ingredients to blend and the flavors to develop. When we are ready to serve the salad, we can add some freshly chopped parsley or dill for an extra touch of color and freshness.

This salad is not only healthy and easy to prepare but also versatile, as it can be served as an appetizer, side dish, or even as a main course in a light meal. So enjoy a delicious and refreshing combination, perfect for any occasion!

 Ingredients: 500 g boiled red potatoes, 150 g cucumber, 150 g boiled celery (this time I didn't use it), 1 green lettuce, 100 g tomatoes, 100 g red bell pepper (this time I used Kapia pepper), 80 g cheese, 150 g mayonnaise, 50 g yogurt/sour cream, lemon juice to taste, salt.
