Stuffed mushrooms on a tray
To prepare a delicious stuffed mushroom recipe, start by washing the fresh mushrooms well, choosing larger species that are ideal for stuffing. If you want a finer texture, you can gently scoop them out, removing the core, which will be used later in the filling. The mushroom stems and the scooped core should be finely chopped. Then, take a few onions, preferably white or red onions, and chop them finely to add extra flavor to the dish.
In a pan, heat a small amount of oil, enough to cover the bottom of the pan, and add the chopped onion along with the mushroom stems and the scooped core. Sauté over medium heat, stirring constantly, until the onion becomes translucent and the mushrooms start to soften. This is the ideal time to add a few sprigs of freshly chopped parsley, which will bring a fresh taste and an unmistakable aroma.
Once the mixture has a pleasant consistency, add sour cream, ensuring it blends well with the other ingredients. Season with salt, pepper, and if desired, add a little crushed garlic for extra flavor. Let the mixture simmer on low heat, stirring occasionally, to allow the liquid to reduce and the flavors to concentrate. Finally, incorporate breadcrumbs, which will give the filling consistency and contribute to a pleasant texture.
After the filling is ready, take each mushroom and generously fill it with the prepared mixture. Then place them in a baking dish, making sure they are arranged as closely as possible to allow the cheese to melt evenly and form a golden crust. Grate cheese over the stuffed mushrooms, adding a touch of creaminess and a savory taste.
To bake them, preheat the oven to 180 degrees Celsius. You can choose to bake them in a regular dish lined with parchment paper; however, as I did, it is better to transfer them to a rectangular baking dish to ensure the mushrooms stick together and the cheese adheres better. Leave them in the oven for about 20-30 minutes or until the cheese becomes golden and delicious. Serve them hot as an appetizer or main course, and enjoy every bite!
