To prepare a delicious and comforting recipe, we start by gathering all the necessary ingredients. You will need fresh milk, high-quality butter, salt, flour, ricotta or telemea cheese, grated cheese (preferably sheep cheese or cheddar cheese for a more intense flavor), fresh eggs, sour cream, as well as finely chopped herbs such as dill, parsley, or oregano to enhance the flavor.

The first step in preparing this dish is to boil the milk together with the butter and salt. It is important to use a thick-bottomed pot to prevent the mixture from burning. When the milk begins to boil, gradually add the flour, constantly stirring with a whisk or spatula, so that no lumps form. This stage is essential for achieving a smooth and creamy texture.

Once you have well integrated the flour and the mixture has started to thicken, take the pot off the heat and let it cool for about 10 minutes. This cooling time is important as it will allow the ingredients to combine better later. After the mixture has cooled, add the crumbled ricotta or telemea, grated cheese, lightly beaten eggs, finely chopped herbs, and sour cream. Mix everything carefully until you obtain a homogeneous mixture full of flavors.

To bake the dish, prepare some suitable ramekins. Make sure to grease them with butter and dust them with breadcrumbs so that they do not stick. Fill the ramekins with the obtained mixture, being careful not to fill them to the brim, as the dish will rise during baking. It is recommended not to use very small molds, as they may collapse after baking and there won't be much filling left.

Place the ramekins in a larger pan with water to bake in a water bath, or you can put them directly in the oven. Preheat the oven to low heat and bake the dish for about 45 minutes. You will know it is ready when a golden and firm crust forms on top, and the inside is fluffy. After baking, let it cool slightly before serving.
