Spinach and Sesame Roll
DOUGH: Start by sifting the flour together with the baking powder to avoid lumps and ensure a fine texture of the dough. Place the mixture in a large bowl and create a well in the center. FILLING: For the filling, wash the fresh spinach under a stream of cold water, removing all impurities. Boil it in a pot with salted water until it softens, then drain and chop finely. Allow the spinach to cool completely, as adding warm ingredients can affect the final consistency. Once the spinach has cooled, mix it in a bowl with the grated cheese, the two beaten eggs, a teaspoon of salt, and 3/4 of the sesame seeds. If the mixture is too soft, you can add breadcrumbs or semolina to achieve a firmer consistency that allows for easy rolling of the dough.
After the filling is ready, roll out a sheet of dough on the work surface using a rolling pin until it becomes thin. Spread the spinach filling in an even layer over the surface of the dough, making sure to leave a free edge on all sides. Roll the dough tightly, starting from one side, and press gently to avoid air bubbles. Make sure to seal the ends of the roll well to prevent the filling from leaking during baking.
Place the roll in a baking tray lined with parchment paper, brush the entire surface with a beaten egg yolk to achieve a golden, appetizing crust. Sprinkle the remaining sesame seeds on top, which will add a crunchy note and delicious flavor. Place the tray in the preheated oven at 120 degrees Celsius, at a moderate heat, and let it bake until the roll is golden brown and the dough is fully cooked.
