My dear ones, here is my recipe for this month's contest: "flower" of smoked salmon with grapefruit sauce! This recipe is not only delicious but also visually impressive, perfect for pampering your guests or adding a touch of elegance to your table.

For one person, you will need the following ingredients: 3-4 slices of smoked salmon (you can easily find at Lidl), a fresh grapefruit, 2-3 slices of tomato, 2-3 slices of cucumber, a little onion, lettuce (you can use arugula or romaine), a few sprigs of dried or fresh dill, olive oil, a little vinegar, salt, pepper, and, most importantly, an aluminum ring mold!

To begin with, I will tell you how I improvised the ring mold. Last Sunday I was at a private catering event and, as usual, I forgot my utensils at home. So, instead of the stainless steel ring, I used a sheet of aluminum foil that I folded into four and rolled by hand, securing it with a few staples.

Now let’s deal with the grapefruit! It is essential to remove that bitter skin, leaving only the pulp. Start by cutting off the tops of the grapefruit and then, with a sharp knife, cut away the thick skin, following the contour of the fruit. Don’t be afraid to remove everything, as this semicircular motion will help achieve perfectly juicy pulp. After you have peeled the grapefruit, separate the slices from the skin that divides them, so you get nice segments without skin.

Put 4-5 slices of grapefruit into a bowl, alongside the sliced salads, tomatoes, and cucumbers. Now, let’s take care of the dressing! Squeeze the juice from the grapefruit into a small bowl – you will get about 2 tablespoons of juice. Add a tablespoon of olive oil, a teaspoon of apple cider vinegar or white wine (avoid balsamic vinegar, which would change the taste), and the chopped dill. Add the finely chopped onion, salt, and pepper, then mix everything with a small whisk or a small mixer to achieve a slightly creamy texture.

Now that you have all the ingredients ready, take the ring mold and place it on the serving plate. Fill the ring with the salad mixture, tomato, and cucumber, and then wrap the slices of salmon around the ring, creating a flower shape. Make sure the slices of salmon are thin to achieve an elegant presentation.

Once you are done, add the dressing in the middle of the salad and remove the ring. Serve the dish alongside toasted or regular bread. Since it’s summer and the weather is warm, a glass of dry white wine or a flute of champagne would perfectly complement this appetizer. It’s ideal for an elegant dinner or a delicious brunch with friends. I wish you great success in the kitchen!
