Omelette with Tomatoes

After washing them, we cut them into small pieces, so they integrate well into the final dish. The onion, on the other hand, will be carefully peeled, then cut either into thin rings or cubes, depending on our preferences and their size.
Next, we take care of the three eggs that we will beat in a bowl, adding a pinch of salt to enhance their flavor. It is important to beat them well, so that the egg whites and yolks are completely homogenized, resulting in a uniform mixture. Once the eggs are ready, we place a pan on high heat, adding a generous amount of oil to fry them. When the oil is hot enough, we pour in the beaten eggs and let them fry until they become golden and fluffy. After frying, we remove them from the pan and transfer them to a bowl, setting them aside for the moment.
