Mushroom Mosaic with Potatoes and Eggs
To prepare a delicious main dish of potatoes with mushrooms and eggs, start by boiling the potatoes in their skins in a pot of salted water until they become tender. This process may take between 20 and 30 minutes, depending on the size of the potatoes. When they are ready, remove them from the water and let them cool slightly, then peel them and cut them into thin slices. Meanwhile, boil the eggs to hard boil them. They should boil for 10-12 minutes, after which they should be plunged into cold water to stop the cooking process and make peeling easier.
In the meantime, prepare the mushrooms. Slice them thinly and sauté them in a pan with hot oil until they become golden and release their flavors. It is important to stir them constantly to avoid burning. The mushrooms add a savory taste and a pleasant texture to the final dish.
Once all the ingredients are prepared, proceed to make the white sauce. In a saucepan, melt a little butter and add the flour, stirring continuously to avoid lumps. When the flour turns slightly golden, extinguish it with milk, adding it gradually while continuing to stir. Cook the sauce over low heat until it thickens, then let it cool.
In a large bowl, combine the sliced potatoes, sautéed mushrooms, chopped eggs, and white sauce. Add half of the grated cheese, mixing well until all ingredients are evenly incorporated. Season the mixture with salt and pepper to taste.
Prepare a heat-resistant dish by greasing it with a little oil to prevent sticking. Pour the mixture into the dish, leveling it with a spatula. On top, evenly distribute the sour cream and the remaining grated cheese, which will form a delicious crust during baking.
Place the dish in a preheated oven at medium temperature and let it bake until the surface becomes golden and appetizing, about 30-40 minutes. When done, remove the dish from the oven and let it cool slightly before portioning.
This dish can be served immediately, drizzled with a little melted butter or tomato sauce, depending on preferences.
