Mushroom and pea pie
To prepare a delicious mushroom and pea pie, we start with the dough. In a large bowl, we add 500 grams of flour, 100 milliliters of oil, and 250 milliliters of mineral water. We mix with a spatula until we obtain a homogeneous composition. Then, we knead the dough on a floured surface for about 10 minutes, until it becomes elastic and smooth. This step is essential to achieve a fluffy and tasty pie.
Separately, we prepare the filling. In another bowl, we combine 200 grams of soft margarine with two tablespoons of flour, mixing well until we achieve a creamy texture. This composition will add extra flavor to our pie. After we finish with the dough, we sprinkle the work surface with flour and roll out the dough into a sheet that is not too large, but sufficient to cover the baking pan.
We evenly spread the margarine mixture over the sheet and carefully roll it up, forming a log. We wrap the log in plastic wrap and let it chill for about 30 minutes, to firm up a bit and make it easier to handle.
In the meantime, we take care of the filling. We clean 300 grams of mushrooms and slice them. In a pan, we heat two tablespoons of oil and add the mushrooms along with 200 grams of peas, which can be fresh or canned. We let them sauté on low heat, adding a little water, until the mushrooms become tender and the peas are well cooked. After they cool down, we mix the mushrooms with the desired sauce and season with salt, pepper, and other preferred spices, adjusting the taste according to everyone's preferences.
After the dough has chilled, we divide it into two equal parts. We roll out each part into thin sheets, large enough to cover the baking pan. We prepare the pan with parchment paper, then place the first sheet of dough, add the mushroom and pea filling, and then cover with the second sheet. We brush the pie with a little oil and, if desired, sprinkle sesame or poppy seeds on top for a more attractive appearance.
The pie is baked in a preheated oven at 180 degrees Celsius for about 45 minutes, or until it becomes golden and crispy. Finally, we let it cool slightly before cutting it into portions. Enjoy this pie warm, alongside a fresh salad or a cup of yogurt, and savor its delicious flavors!
Ingredients: Dough: 15 tablespoons flour, 15 tablespoons mineral water, 7 tablespoons oil, 50 g margarine + 2 tablespoons flour. Stuffing: 200g mushrooms (I used from the can), 150g peas, 2 tablespoons oil, salt, pepper, rosemary, marjoram and a sauce made of: 50ml oil, 50 g flour or starch, 450 ml water or vegetable soup.
