Lentils are an excellent source of protein and nutrients, making them ideal for a healthy and nourishing meal. We start by preparing the lentils, soaking them in cold water for 6-8 hours, depending on the type of lentil used. This step is essential as it helps reduce cooking time and improves digestibility. After soaking, we rinse the lentils well and boil them in a pot with water and salt over medium heat.

When the water starts to boil, we notice the formation of foam on the surface; using a ladle, we remove this foam to achieve a cleaner dish. Then, we add a finely chopped carrot, a green pepper, and a few bay leaves to enhance the flavor. We let the lentils continue to boil, stirring occasionally to prevent them from sticking to the bottom of the pot.

Meanwhile, we prepare the vegetable mix that will add flavor to the dish. In a pan, we heat a little oil, then add a finely chopped onion and a diced ripe tomato. These vegetables will be sautéed lightly until they become translucent and aromatic. To this mix, we add a teaspoon of sweet paprika, which will give a vibrant color and delicious taste to the food. We mix well, allowing the flavors to combine, after which we add a few sliced sausages, which will add extra flavor and texture.

After the sausages are browned, we pour the vegetable and meat mixture over the boiling lentils. This is the stage where the dish begins to develop a complex and inviting aroma. We continue to let it boil, covering the pot to retain steam and speed up the cooking of the ingredients. After about 10 minutes, we add the diced potatoes, which will contribute to the dish's consistency.

We let everything boil until the potatoes become tender, and the lentils are perfectly cooked. Finally, we can adjust the taste with salt, pepper, or even a few fresh herbs, such as parsley or dill. We serve the dish hot, perhaps alongside a fresh salad, for a delicious lunch or dinner, full of nutrients and flavors. This recipe is not only nourishing but also comforting, perfect for chilly days.

 Ingredients: 350g lentils, 1 finely chopped onion, 1 finely chopped tomato, 2 diced carrots, 3-4 smaller diced potatoes, 1 diced green pepper, 2-3 fresh sausages (barbecue type) sliced, 1-2 bay leaves, 1 teaspoon sweet paprika, oil, salt, water (approximately 1 liter)
