To prepare a delicious and flavorful dish, we start by sautéing the onion and bell pepper in a large pan, using a generous amount of oil. It is important to choose a quality onion that will provide a sweet taste and caramelize easily. The bell pepper, ideally, should be red to add a touch of sweetness and color. We chop the onion finely and the bell pepper into small cubes, then add them to the pan, stirring occasionally to avoid burning. We let these vegetables sauté for about 3-4 minutes until the onion becomes translucent and the bell pepper enhances its flavor.

Once the onion and bell pepper are ready, we add the beans, which should have been drained and well rinsed before use. It is essential to ensure that the beans are fresh, as they will bring a crunchy texture and a pleasant taste to the dish. We slice the carrot into thin rounds or small cubes and add it to the pan. The carrot will add extra sweetness and perfectly complement the other vegetables. We mix everything well and let it cook for a few minutes, during which the vegetables will release their juices.

After the vegetables have softened a bit, we add water, making sure it does not exceed the level of the vegetables. It is important not to add too much water, as we want to preserve the essence of the vegetable flavors. We let it simmer over medium heat, so the beans become almost cooked. This process can take between 15-20 minutes, depending on how fresh and large the beans are.

Once the beans are almost cooked, we add the tomatoes in juice or the juice diluted in a small amount of water to achieve a better consistency. It is recommended to choose quality tomatoes, either canned or fresh, as they will provide a rich and flavorful taste. We season with salt, pepper, and if desired, add crushed garlic for an additional touch of flavor. We mix the ingredients well and let it cook for another 10 minutes, so the flavors combine perfectly, resulting in a tasty, colorful, and delicious dish. Finally, we can serve this dish hot or cold, alongside fresh bread or a side of rice. This recipe is not only delicious but also healthy, being rich in vitamins and essential nutrients.

1kg green beans (canned or frozen) 1 finely chopped onion 2 carrots sliced or grated 4-5 tablespoons of oil 2-3 tablespoons of broth or tomatoes in broth 1 bell pepper diced (I didn't have it and used pepper paste) salt, pepper, herbs, and you can also add a clove of garlic.
