Cauliflower Risotto
Risotto is an Italian dish that exudes comfort and flavor, perfect for a family dinner or for guests. We start by preparing a deep pot, into which we will add a splash of olive oil. The oil will help flavor the dish and provide a rich taste. On top, we add the onion, which we will finely chop or leave whole to remove later. When the onion becomes translucent and starts to take on a golden hue, it's time to add the rice. It's essential to use a special rice for risotto, such as Arborio or Carnaroli, as they have a high starch content that will give the dish a creamy texture.
The rice is sautéed in the flavored oil, stirring constantly, until the grains become slightly translucent. This is the moment when we add a ladle of hot broth, which can be chicken or vegetable broth, or even water with a stock cube, simmering on the adjacent stove. Personally, I used water in which I boiled cauliflower, which will enhance the flavor of this wonderful ingredient in the risotto. When the liquid starts to reduce, we add another ladle, continuing to stir so that the rice absorbs all the flavors.
The risotto cooks for about 17 minutes, during which it is important to keep an eye on it, stirring constantly to prevent sticking. When the rice is cooked al dente and the liquid has been absorbed, we take the pot off the heat. Here comes a magical moment: we add a raw egg yolk, which will give it creaminess, and grated cheese, such as Parmigiano-Reggiano, which will intensify the flavor. We mix well to combine all the ingredients and achieve a homogeneous texture.
To finish the dish, we serve the risotto in a deep plate, and on top, we place boiled cauliflower florets, drained and then lightly sautéed in a pan with a little oil. This will add a crunchy note and a pleasant color to the dish. The whole process is a wonderful choice that brings together intense flavors and varied textures, transforming an ordinary meal into an unforgettable culinary experience. Cauliflower risotto is not only delicious but also an excellent way to enjoy vegetables in a unique way.
Ingredients: Ingredients for 2 servings: 160 g rice, 1 small onion, a bunch of cauliflower the size of a palm, oil, salt, cheese (parmesan or any other type of cheese) grated - about 50 g, 1 raw egg yolk.
