Spaghetti with spinach and smoked ham cream

Spinach shrinks a lot in the pan, and in spaghetti with spinach and smoked ham cream it turns into a green sauce. Spinach pasta comes out with a fairly thick sauce that clings to the spaghetti. I choose spinach with young leaves, because it softens quickly and doesn't leave tough stems in the sauce. Prep: 15 minutes. Cooking: 29 minutes. Total time: 44 minutes. Servings: 4. About 520 kcal and 22 g protein per serving.
Ingredients
- 1 medium onion (150 g)
- 1 red bell pepper (150 g)
- 1 clove of garlic
- 150 g smoked ham
- 500 g spinach
- 300 g spaghetti
- 1500 ml water
- 1 teaspoon salt
- 2 tablespoons oil
- 200 ml cooking cream
- 1/2 teaspoon fine salt
- 1/2 teaspoon ground pepper
Preparation
1. Peel the onion and chop it finely. Cut the red pepper into julienne and the ham into thin strips, then peel the garlic and chop it finely. 2. Bring 1500 ml of water to a boil, add 1 teaspoon of salt and, when the water is boiling, add the spaghetti. Cook them for 10 minutes. 3. Meanwhile, heat 2 tablespoons of oil in a pan, add the onion and garlic and fry them for 1 minute. 4. Add the pepper and ham to the pan and cook them for 4 minutes, until the pepper softens and the ham browns at the edges. 5. Add the spinach and fry it for 4 minutes, until it wilts and shrinks a lot. 6. Mix 200 ml cooking cream with 3 tablespoons of hot sauce from the pan, then pour everything back into the pan. Add 1/2 teaspoon of fine salt and 1/2 teaspoon of ground pepper, stir and let it simmer gently for 10 minutes. 7. Drain the pasta, put it in the pan over the sauce, mix well and serve hot.
Notes
Serve with grated parmesan and a simple green salad. Leftovers keep in the fridge for up to 3 days, and when reheating add a few tablespoons of water, otherwise the sauce thickens too much. For the ham, choose one with a little fat on the edge, it browns better and gives flavor to the sauce. If you don't have fresh spinach, use 500 g frozen spinach, thawed and squeezed well. Contains gluten and lactose.
Frequently asked questions
What can I replace the smoked ham with?
150 g smoked chicken breast, cut into strips the same way, or 100 g smoked bacon, melted lightly in the oil before the onion.
Can I use penne instead of spaghetti?
Yes, 300 g penne are cooked in the same water and for about the same time. Tubes hold the sauce better than spaghetti.
What do I do if the sauce curdles?
Take the pan off the heat and whisk the sauce until smooth, helping yourself with 2 tablespoons of hot water. Next time don't let the cream boil hard.
