Pumpkin Ravioli in Butter Sauce with Aromatic Herbs
To prepare a delicious pumpkin-filled ravioli platter, we start by focusing on the dough. In a large bowl, we add 200 grams of wheat flour, ensuring it is of good quality to achieve a fine texture. We then add two fresh eggs, making sure to mix them well so that they integrate evenly. We don't forget a pinch of salt, which will enhance the flavors of the dough. Depending on the need, we add a little water, just enough to achieve the right consistency. Now, it's time to get moving and knead the dough for about 20 minutes. It will become elastic and smooth, and then we cover it with plastic wrap and let it rest in a warm place, for example, under a slightly heated pot, to allow the ingredients to relax.
After the dough has had time to rest, we prepare to turn it into thin sheets of ravioli. With floured hands, we divide the dough into four equal pieces. We work with each piece one at a time, passing it through the pasta maker until we achieve a thin but sturdy sheet. Each sheet is cut into three parts, and we prepare to fill the ravioli with a delicious pumpkin filling. This is made from boiled pumpkin, which we turn into a fine puree. We add salt, pepper, and a dash of chili pepper to give it a spicy touch, and finally, grated Parmesan cheese, which will add a note of creaminess and flavor.
To form the ravioli, we use a brush to apply water to the edge of the dough, which will help seal it. Carefully, we press with our fingers to remove any air from inside the ravioli, thus avoiding it puffing up during boiling. We gently mix so that the sauce coats each ravioli, giving them a special flavor. Serve immediately, enjoying a comforting and delicious dish, perfect for any occasion.
