To prepare this delicious recipe for chicken and vegetable rice noodles, we start by ensuring we have all the necessary ingredients and tools at hand. The first step is to heat vegetable oil in a narrower pot with high walls at a high temperature, about 190 degrees Celsius (375 degrees Fahrenheit). It is essential that the oil is enough to cover the noodles.

To check if the oil has reached the ideal temperature, you can use a strand of rice noodle. When it starts to puff up, it's a sign that the oil is ready. Using kitchen tongs, take half of the amount of noodles specified in the recipe and carefully dip them into the hot oil. It is important not to leave them in the oil too long; just widen the tongs a bit so that the noodles do not fall out. They will fry quickly, in a few seconds, turning into delicious crispy puffs. Once they have puffed up, remove them from the oil and let them drain on an absorbent paper towel to remove excess oil.

In another pot, prepare the chicken mixture. Cut the chicken breast into cubes and combine it with grated lemon zest, crushed garlic, grated ginger, pepper, and if desired, dried crushed chili. This will add a spicy note to the dish. Mix all the ingredients well to ensure an even distribution of flavors.

Separately, combine water with starch and set the mixture aside. Now, in a wok or a wider pan, add the two tablespoons of peanut oil and let it heat up. Once the oil is hot, add the seasoned chicken and fry for about 3-4 minutes until it is well cooked and slightly browned.

After the chicken is ready, add the baby beans and baby corn to the pan. Continue to fry the two ingredients together for 2 minutes, stirring constantly to avoid sticking. Then, pour the water and starch mixture over the chicken and vegetables, stirring quickly until the sauce thickens, which should take about 1 minute.

To finish the dish, add coriander (or parsley), brown sugar, fish sauce, and soy sauce. Heat the mixture again to ensure a harmonious integration of flavors. Once the sauce is warm, pour everything over the fried rice noodles and mix well to coat each strand of noodle with the delicious sauce. Serve immediately, enjoying a savory meal full of textures and flavors that will surely delight you.

 Ingredients: Vegetable oil for frying, a good handful of rice noodles, 1 (larger) chicken breast, the peel of a lemon, 3 cloves of garlic, 1 teaspoon of freshly grated ginger, 1/4 teaspoon of dried and crushed chili pepper (I didn't add this), pepper to taste, 60 ml of water, 1 tablespoon of cornstarch, 2 tablespoons of peanut oil, a good handful of green bean pods (baby), 1 can of baby corn (I didn't add this), 1/4 teaspoon of coriander (I used parsley), 2 tablespoons of brown sugar, 2 tablespoons of fish sauce, 1 tablespoon of soy sauce.
