Fish is a versatile and healthy ingredient, and its preparation can bring a special flavor to your meal. We start by washing the fish well under a stream of cold water, ensuring that we remove any impurities. Once cleaned, we will portion it into suitable pieces, vertically, so that each piece cooks evenly. We place these portions in a deep tray, which will allow for an even distribution of flavors.

Seasoning the fish is an essential step to highlight its taste. We sprinkle salt and seasoning on each side of the fish, making sure to cover the inside as well, to ensure that the flavors penetrate well. Once the fish is well seasoned, we move on to stuffing it with julienned onion. This will add a natural sweetness and a pleasant aroma during baking.

The remaining onion will be evenly distributed in the tray, and the tomatoes, cut into pieces, will add a splash of freshness and acidity, which will balance the flavor. Leeks, cut into suitable rounds, will provide a crunchy texture, while garlic, cut in half horizontally, will bring an intense flavor. Peppercorns, bay leaves, and rosemary will be scattered throughout the tray, each ingredient contributing its unique character.

After adding all the ingredients, we pour in olive oil, water, and optionally vinegar, if using fresh tomatoes. It is important to add enough water to cover the fish halfway, to ensure even cooking and to prevent it from drying out. The tray is now ready for the oven.

We set the oven to a suitable temperature and place the tray inside. Cooking the fish will require attention; when we notice it has browned slightly on one side, we carefully turn it over to ensure it cooks evenly. During baking, it is important to periodically check the liquid level in the tray. If we notice that the water has evaporated, we can add a little from time to time, using a spoon, to keep the fish moist and tasty.

After a cooking period, when the fish is well browned and juicy, we can take it out of the oven. Our dish is now ready to be enjoyed. This dish not only looks appetizing but also combines flavors that perfectly complement each other, turning any meal into an unforgettable feast. We serve the fish alongside seasonal sides or fresh salads to balance the meal.

 Ingredients: 1,200 kg cod (approximately 3 fish) 2 medium red onions 1 medium head of garlic 400 g cherry tomatoes (I used canned ones) 3 tablespoons of vinegar if using fresh tomatoes (I didn't add it because the canned ones had vinegar) a smaller leek 100 ml oil 1 teaspoon of peppercorns 8 bay leaves (depending on the tray) 1 teaspoon of rosemary salt and vegeta to taste water depending on the tray
