The heads of the fish are cut off and the belly is slightly slit, just enough for almost nothing to come out..:)) The bag didn't say they should be decapitated, but I have my standards..:)) Once prepared this way, they are seasoned and then coated in corn flour. They are fried in a bath of oil. They are served hot with garlic sauce on top, plain, or alongside a portion of French fries (also with garlic sauce..:)) Don't be afraid of the bones, because they are so fragile that they disappear when fried!..:)) By the way, I forgot to mention. I soaked them in milk for about 15 minutes before seasoning and frying them.
