Fish fillet with rice
To prepare a delicious main dish with fish and rice, the first step is to choose the right ingredients. We start by washing the rice in several waters to ensure that it is clean and that excess starch is removed. It is recommended to continue washing the rice until the water becomes clear, which will prevent the grains from sticking during cooking. Once we have obtained clear water, we let the rice soak in cold water for about an hour to achieve the perfect texture.
Meanwhile, we take care of the fish fillet, in this case, pangasius. It is lightly scored on both sides, which will help the flavors penetrate and ensure even cooking. After scoring, we let the fillet drain on a kitchen towel to remove excess water, so we can achieve a beautiful crust when frying.
The sauce in which we will prepare the fish is simple but very tasty. We beat a few eggs in a bowl, add a tablespoon of flour and our favorite spices for fish. This sauce will give a crunchy texture to the fish fillets. Each piece of fish is first passed through flour, then through the prepared sauce, making sure it is completely covered. Then, we carefully toss them into the hot oil pan, being careful to keep the heat low so as not to burn the fish. It is important not to overcrowd the pan, allowing each piece to cook evenly.
After the fish is fried, we remove it to a platter covered with a kitchen towel to absorb excess oil. Next, we take care of the side dish. In a separate pan, we sauté a finely chopped onion until it becomes golden and fragrant. Then, we add a teaspoon of broth, which will enhance the flavor of the dish.
Once the onion is well sautéed, we add the drained rice and enough water to cover it. It is essential to stir constantly to prevent the rice from sticking to the pot. Along the way, we can add water if necessary until the rice becomes soft and fluffy. Finally, we don’t forget to add a little Maggi, to taste, to enhance the flavors.
The fried fish is served warm alongside the fragrant rice and, of course, with fresh lemon slices, which will add a note of freshness and a pleasant contrast of acidity. This recipe is not only delicious but also easy to prepare, making it perfect for a family dinner or a special occasion.
