- 1 large carrot
- 2 onions
- 2 small hot peppers (one red, one green)
- 1 head of garlic
- Olive oil, for sautéing
- Fresh parsley, chopped
- Fresh lovage, chopped
Step-by-step instructions
Step 1: Preparing the fish
We start by preparing the carp. If you bought it already cleaned, that's perfect! All you need to do is wash it well under cold running water. Then, I recommend cutting off the head and slicing it lengthwise in half. This will help with marinating and even cooking. It’s important to dry it well with a paper towel to prevent the salt from sticking too much to the meat.
Step 2: Preparing the fire and the grill
If you have the privilege of cooking outdoors, light the fire in the yard. Use a cooking disc, which you will cover with a thin layer of salt. This method will give the fish an ideal salty flavor without making it too salty. If you don’t have a disc, you can use a frying pan or a classic grill.
Step 3: Cutting and preparing the vegetables
While waiting for the fire to heat up, you can take care of the vegetables. Cut the bell peppers into strips or large cubes, the carrot into rounds, and the onion into halves or quarters. You can slice the hot pepper lengthwise, and crush the garlic to release its flavors.
Step 4: Sauté the vegetables
In a pot, add a little olive oil and let it heat up, then add the chopped vegetables and pepper to taste. Sauté them until they release their juices and become slightly translucent. This is the perfect time to add the two cups of water, mixing well, and let everything boil.
Step 5: Cooking the carp

Cover the dish with a lid and let it sit for 10 minutes so the flavors meld well.
