To prepare a delicious pie filled with potatoes, pumpkin, and cheese, the first steps involve boiling or steaming the potatoes, the whole onion (peeled), and the pumpkin. This process will ensure a soft texture and rich flavor. Once these vegetables are cooked, we remove them and let them cool slightly before mixing them.

In a large bowl, we mix the potatoes well with the pumpkin, ensuring we achieve an even combination. We add the fried bacon, which we prepared earlier in a pan without oil or other fats, so we can enjoy the intense flavor it brings. We continue with the cheese, which we can grate large or cut into small cubes, depending on personal preferences. Cervia salt will enhance the flavors, while finely chopped parsley and rosemary will add a fresh aroma and a special touch to the dish.

We mix all the ingredients until part of the potatoes and pumpkin turns into a fine cream, while the other part remains in pieces, providing a pleasant texture. This aromatic mixture will become our filling.

Next, we roll out a sheet of dough, large enough to cover the entire tray. Carefully, we spread the dough with a spoon or by hand, applying an even layer. Then, we roll the dough like a roulade, being careful not to break it, and finally, we twist it into a spiral so we can store it in a bowl. We cover the bowl with cling film and let it rest for at least 30 minutes, which will help the dough become easier to handle.

After the resting time has passed, we add the previously prepared filling, distributing it evenly over the entire surface. We cover everything with the other sheet of dough, ensuring we seal the edges to prevent the filling from leaking during baking.

We preheat the oven to a temperature between 180-200 °C and, once ready, we introduce the pie to bake. We let it bake until it becomes golden and crispy, and the inviting aroma will fill the entire kitchen. When it's ready, we take the pie out of the oven and let it cool slightly before cutting it. This is a recipe that combines tradition with simple yet flavorful ingredients, perfect for any occasion.

 Ingredients: Dough 1: 10 tablespoons of flour, 10 tablespoons of sparkling water, 4 tablespoons of oil. Mix everything in a bowl and you will get a soft and delicate dough. Dough 2: 1 tablespoon of butter at room temperature (meaning it should be like a cream), 1 tablespoon of flour. Mix them in a small bowl to obtain a cream. Filling: 600 g of potatoes (weighed raw and peeled), 300 g of pumpkin (weighed raw and peeled), 1 onion, 50 g of bacon, 50 g of Grana Padano cheese (or a type of cheese), fresh rosemary and parsley, sweet salt from Cervia.
