Pie with Layers and Yogurt Cheese Filling
I greased the 23 cm diameter and 7-8 cm high tray with a little oil, making sure all corners are well covered to prevent sticking. I started by placing two sheets of pastry in the tray, being careful to lay them down gently so as not to tear them. Feta cheese is the key ingredient of this recipe, so I crushed it by hand or with a fork until it became a fine paste. I then added the yogurt and eggs, mixing with a fork until the mixture became homogeneous.
The first sheet of pastry is folded diagonally, forming a triangular shape, and is placed with the folded edge facing the outside of the tray, covering half of the tray. The other half will be covered with the second sheet, which will also be placed diagonally. Moistening the sheets is essential to achieve a soft and savory texture. Using my fingers, a brush, or even a spray bottle, I moistened the sheets with a mixture of water and oil, ensuring they are well covered.
Over the moistened sheets, I spooned some of the egg, yogurt, and feta mixture, placing the cheese in different spots to add an interesting texture. If you wish, you can mix the other cheese into the mixture from the beginning, but I preferred to put it separately to better enjoy the taste. I continued to layer another set of sheets, moistening them again with the water and oil mixture and pouring the next portion of cheese filling.
I repeated this process until I reached the last layer of sheets. Over this, I poured the remaining mixture of cheese, yogurt, and eggs, adding a small amount of water and oil, which made the filling slightly liquid. This consistency is essential to ensure even distribution of the filling. After pouring the liquid mixture, I carefully moved the tray to facilitate an even coating.
Baking is done at 200 °C, and the cooking time will depend on your oven. It is important to watch the pie and let it brown nicely, forming a crispy crust. After it has baked, I let the pie cool slightly before cutting it. This pie is perfect to be served warm or at room temperature, being a delight for both lunch and a light dinner. The flavors blend perfectly, and each slice will bring a smile to the faces of loved ones.
