Nut Cake
To prepare a delicious cookie and caramel cake, we start by gathering all the necessary ingredients: 400 grams of crushed cookies, 200 grams of ground nuts, 6 egg yolks, 20 tablespoons of sugar (10 for the egg whites and 10 for the caramel), 200 grams of melted butter, and 6 egg whites. Make sure all the ingredients are at room temperature for a uniform mixture.
The first step is to preheat the oven to 180 degrees Celsius. In a large bowl, mix the crushed cookies with the ground nuts, egg yolks, 10 tablespoons of sugar, and melted butter. Use a spatula or wooden spoon to combine the ingredients until you achieve a homogeneous mixture. This delicious base will form the bottom of your cake. Pour the resulting mixture into a baking pan lined with parchment paper and level the surface with a spatula. Place the pan in the oven for about 25-30 minutes or until the base turns golden and firm.
Meanwhile, we take care of the caramel meringue. Beat the egg whites in a clean, dry bowl until foamy. Gradually add the remaining 10 tablespoons of sugar and continue mixing until the mixture becomes glossy and forms stiff peaks. In a small saucepan, melt the 10 tablespoons of sugar until it turns into caramel. Be careful not to burn it! When the sugar has completely melted, carefully add 2 tablespoons of water and stir vigorously to combine. Let it boil for a few minutes until you obtain a caramel syrup.
When the base in the pan is ready and has taken on a golden hue, remove it from the oven and carefully pour the caramel meringue on top. Use a spatula to spread the meringue evenly. Put the pan back in the oven and bake for another 10-15 minutes or until the egg whites turn brown and the meringue becomes slightly crispy.
After the cake is ready, let it cool slightly in the pan. It is important to cut it into portions when it is warm, using a wet knife to prevent sticking. Arrange the slices on platters and let them cool completely in the refrigerator. The cake is served cold, with an intense caramel flavor and a pleasant contrast between the cookie base and the fine meringue. This combination of textures and flavors will surely bring smiles to the faces of your loved ones. Enjoy!
