We begin this delicious recipe by preparing a larger bowl, where we will sift the flour carefully, ensuring that it is fluffy and free of lumps. Once the flour is sifted, we add the baking powder, an essential ingredient that will help the dough rise evenly. We mix the two ingredients well so that they combine perfectly.
The next step is to deal with the fats. Lard and butter, grated for easier incorporation, are placed on top of the flour mixture. With our palms, we rub these fats into the flour until we obtain a crumbly texture, similar to bread crumbs. This step is crucial as it will influence the final texture of our product.
After achieving the desired mixture, we add the sugar, lemon zest, and, if desired, vanilla. These ingredients will bring a pleasant aroma to the dough. Next comes the whole egg and the yolks, which will provide richness and moisture. We also add the three tablespoons of sour cream, essential for binding the ingredients. We start kneading the dough, and if it turns out to be too dry, we add sour cream one tablespoon at a time, continuing to knead until we obtain a soft and slightly sticky dough that can be rolled out.
Once we have the desired consistency, we divide the dough into pieces. I chose to make three balls, and I kept the rest in the freezer for future use. Each ball is rolled into a round shape, and then cut into eight slices. Here comes the fun part: on each slice, we put a teaspoon of fruit spread on the wider side and carefully roll towards the tip, ensuring that the spread is well sealed in the dough.
After we finish rolling all the slices, we carefully place them on a tray. We preheat the oven to medium heat and place the tray inside. We bake until the slices turn slightly golden. It is important to be careful, as the baking time may vary, and I had the unpleasant experience of leaving them too long and burning them a little.
Once baked, we carefully remove them from the tray and arrange them on a platter. We finish by dusting them with powdered sugar mixed with vanilla for an aesthetic appearance and delicious taste. These treats are served cold, making them ideal for a snack or a savory dessert. So, get ready to indulge your taste buds with these delights!
Ingredients: 500 g flour, 1 and 1/2 teaspoons of baking powder, 1 whole egg, 2-3 egg yolks (2 if the eggs are large and 3 if they are smaller), grated lemon zest to taste (or powdered vanilla), 6-7 tablespoons of sugar (it is not sweet at all, and if you use a more sour jam, you should increase the amount of sugar if desired), 4 full tablespoons of lard, 100 g cold butter grated, 4-6 tablespoons of sour cream (you will start with only 3 tablespoons at first and during the kneading, you will add one tablespoon at a time until you get a soft dough that is easy to roll out), jam (or any jam you want as long as it is homemade, not store-bought, as it will liquefy in the heat of the oven).
