To prepare this delicious recipe, we start by bringing the margarine to room temperature, letting it soften for about an hour. This is essential for obtaining a tender and easy-to-shape dough. In a large bowl, we add the softened margarine and mix it with a fresh egg, sour cream, a teaspoon of vinegar, and a pinch of salt. We mix the ingredients well until we obtain a homogeneous and fluffy composition. Finally, we begin to incorporate the flour gradually, mixing with a spatula or with our hands, until the dough becomes compact and slightly elastic. It is not necessary to knead excessively, as we want to maintain a slightly airy texture.

Once the dough is ready, we wrap it in cling film and place it in the refrigerator for at least an hour. This step is important because it allows the dough to rest and become easier to roll out. In the meantime, we take care of the filling. In another bowl, we mix the cottage cheese with sheep cheese, such as telemea or feta, which we crush well with a fork. Then we add 3 tablespoons of grated parmesan, optionally, to enhance the flavor of the filling. We continue with an egg, which we incorporate into the mixture, and season with salt, according to our preferences.

After the resting time for the dough has passed, we take it out of the refrigerator and roll it out with a rolling pin, obtaining a sheet about 0.5 cm thick. With a knife or a dough cutter, we cut the sheet into equal-sized squares. In the middle of each square, we place a teaspoon of the cheese filling, then fold the dough into a triangle, joining the corners, or we can close it in four, forming a cute package. If desired, we can brush the top with a beaten egg to achieve a golden and appetizing crust. Optionally, we sprinkle poppy or sesame seeds for extra texture and flavor.

We place the resulting products on a baking tray lined with parchment paper and put them in the preheated oven at medium temperature, letting them bake until they become golden and appetizing. When they are ready, we take them out of the oven and let them cool slightly before serving. These cheese appetizers are ideal for a party or a family meal, being not only tasty but also easy to prepare. Enjoy them with a glass of white wine or a fragrant tea!
