Baked tench with vegetables, cooked under foil

Baked tench with vegetables uses fish with white meat, but with many small bones that you feel at the table. The fish comes out soft, and the vegetables soak up the juices from the tray. I look first at the fish's eyes, to make sure they are clear. Preparation: 20 minutes. Cooking: 90 minutes. Total time: 110 minutes. Servings: 5. About 430 kcal and 53 g protein per serving.
Ingredients
- 1 tench of about 2 kg (cleaned)
- 4 tablespoons sunflower or olive oil
- 1 teaspoon salt
- 1/2 teaspoon ground pepper
- 2 medium tomatoes (300 g)
- 2 medium carrots (200 g)
- 1 large leek (250 g)
- 3 garlic cloves
Preparation
1. Put 4 tablespoons of sunflower or olive oil in a large baking tray. 2. Clean the tench of scales and innards, wash it well and put it in the tray, on top of the oil. 3. Season the fish inside and outside with 1 teaspoon of salt and 1/2 teaspoon of ground pepper. 4. Cut the tomatoes into thick slices, the carrots into rounds and the leek into slices, then place them in the tray, next to the fish, together with the 3 peeled garlic cloves. 5. Cover the tray with aluminium foil and put it in the oven heated to 160°C. Bake for 1 hour and 30 minutes, until the fish comes away from the bones easily. 6. Serve the fish with the vegetables from the tray and with mashed potatoes or another side dish.
Notes
This is the first time I have cooked this kind of fish, but it turns out very good. The vegetables can be changed to taste, and other vegetables, for example sweet bell pepper, can go in the fish's belly too. If the tench is under 2 kg, the vegetables soften faster and the fish is ready earlier, so check in time. Mashed potatoes are a good side, because they soak up the juice from the tray. Leftovers keep in the fridge for up to 3 days.
Frequently asked questions
What do I do if the tench is too big for the tray?
Cut it in half lengthwise and place the pieces side by side, with the vegetables between them. Cover everything with the foil.
Can I make it with another freshwater fish?
A carp of about 2 kg is prepared the same way, but it has more fat, so the juices in the tray come out greasier.
How do I take out the vegetables without breaking them?
Lift them with a spoon together with the fish and place them next to it. Scoop up the juice left in the tray and spoon it over the fish.
