Welcome to the culinary world of intense flavors and savory textures! Today we are going to prepare a delicious recipe for spicy tigăie with mămliguette, a dish that combines juicy meat with crunchy vegetables, all dressed in a flavorful sauce, perfect to be served alongside warm mămliguette. This recipe is ideal for a family dinner or a get-together with friends, bringing not just taste but a story to the table.

Since ancient times, dishes cooked in pans have been a favorite because they offer a quick and efficient way to bring flavors together. In addition, the traditional staple food in many cultures, mincemeat, becomes a perfect accompaniment to this dish, bringing a pleasant contrast between textures.

Ingredients needed:

- 1 kg pork leg (for those who prefer fattier meat, pork belly can also be used)
- 1 chicken breast (about 1/2 kg)
- 2-3 cabano or oltenești sausages
- 200 g smoked bacon
- 5-6 mushrooms (preferably champignon, but you can use others)
- 1 teaspoon sweet paprika
- 4-5 cloves garlic
- 1 bay leaf
- 1 teaspoon dried basil
- 150 ml white wine
- Salt and pepper to taste
- 1 chili pepper (optional for extra spice)
- 50 ml oil
- 200 g cornflour

Preparing the ingredients:

1.Start by washing the pork under a cold running cold water. Then cut it into evenly sized cubes so that it cooks evenly. This meat will add a rich, juicy flavor to our dish.

2. The chicken breast is also cut into cubes. Usually chicken meat is leaner, so we'll combine it with the pork for a perfect balance of flavors.

3. Slice the smoked bacon into thin strips, and the sausage into slices of about 1 cm. These ingredients will give a smoky taste and a crunchy texture, adding extra flavor.

4. Cut the mushrooms into thin slices. These will cook quickly and add a touch of moisture to the dish.

5. Thinly slice the garlic and finely chop the chili peppers (if you want a little more heat in the dish).

Preparing the spicy skillet:

1- In a large skillet, or preferably a wok, add the oil and heat over medium heat. Add the pork cubes, along with 1 cup water, salt, pepper and bay leaf. Cook slowly so the meat becomes tender.

2. During cooking, check the meat constantly. Add a cup of water if necessary to prevent sticking. It is very important to maintain adequate humidity so that the meat does not dry out.

3. When the pork is almost cooked, add the chicken breast cubes, bacon strips, sausage slices and mushrooms. Cook for about 10 minutes, stirring occasionally.

4. After 10 minutes, add the garlic, chili pepper, paprika and basil. Mix everything well to combine the flavors.

5. Finally, pour in the white wine and simmer for another 2-3 minutes until the sauce thickens slightly. The wine will add a depth of flavor and the flavors will combine perfectly.

Making the mămliguette:

1- In a separate saucepan, add water (about 1 quart) and bring to a boil. Add salt to taste.

2. When the water is boiling, gradually add the cornmeal, stirring constantly with a wooden spoon or a wooden spoon to avoid lumps. Cook the porridge over low heat, stirring frequently, for about 15-20 minutes, until thick and creamy.

3. Once cooked, allow the mămliguette to cool slightly, then you can form it into clumps or simply serve it straight from the pan.

Serving:

To serve, spoon generous portions of the spicy hot skillet onto plates and add a few clumps of dumplings. If you like, you can sprinkle some fresh basil or parsley on top for a more colorful look. This delicious combination will delight even the pickiest eaters.

Helpful hints:

- If you prefer a vegetarian option, you can replace the meat with tofu or vegetables like eggplant and zucchini.
- Offer a squeeze of lemon juice before serving to add a touch of freshness.
- This recipe pairs perfectly with a fresh green salad or pickles, which will add a touch of acidity.

Frequently asked questions:

1. Can I use other meats?
Of course! You can experiment with beef or even chicken exclusively, depending on your preferences.

2. Is the recipe suitable for a festive meal?
Absolutely! This spicy taji is a great choice for a family dinner or a special occasion.

3. How can I adjust the spiciness?
If you want less spicy, reduce the amount of chili peppers or use a sweet pepper.

Nutritional benefits:
