Do you want to prepare a savory and hearty dish, perfect for fasting days? Leek rice pilaf is the ideal choice! This simple and quick recipe will delight you with its delicate flavors and pleasant texture. Let's get started!
Ingredients:
- 200 g rice (preferably long-grain rice)
- 1/2 bell pepper (red or yellow for extra color)
- 2 pieces of leek (choose fresh leeks with green leaves)
- 1/2 cup broth (tomato or vegetable)
- 3 tablespoons olive oil or vegetable oil
- Salt and pepper to taste (or Delikat for a more intense flavor)
- A handful of fresh parsley, chopped (for garnish)
Preparation instructions:
1. Preparing the ingredients: Start by rinsing the rice under cold running water until the water runs clear. This step is essential to remove the starch and achieve a less sticky pilaf. Cut the bell pepper into small cubes and the leek into thin strips.
2. Sautéing the vegetables: In a deep skillet, add the 3 tablespoons of oil and heat over medium heat. When the oil is hot, add the diced bell pepper and sliced leek. Sauté for 5-7 minutes, stirring occasionally, until they become slightly soft and fragrant.
3. Adding the rice: Once the vegetables are softened, add the rinsed rice to the skillet. Mix well to combine it with the vegetables and coat it in oil. This step will help the rice absorb the flavors of the vegetables.
4. Cooking the pilaf: Pour in 2 cups of water or more if needed. Add salt, pepper, or Delikat to taste. Bring to a boil, then reduce the heat to low, covering the skillet with a lid. Allow to simmer for 15-20 minutes, or until the rice is cooked and has absorbed all the water. Check occasionally and add warm water if necessary.
5. Finishing the dish: Towards the end of the cooking time, add the broth and let it simmer for another 5 minutes, stirring gently to evenly distribute the broth. The rice will take on a beautiful color and intense flavor.
6. Serving: Once the pilaf is ready, remove it from the heat and let it rest for a few minutes. Serve warm, garnished with chopped fresh parsley for an extra touch of freshness and color.
