Ribs are a versatile and tasty ingredient, and when prepared correctly, they become a true delicacy. We start by salting the ribs, ensuring that each piece is evenly coated with salt. Then, we heat a deep pan with oil and fry them until we achieve a golden and appetizing crust on each side. Once the ribs are ready, we remove them from the pan and set them aside to rest. In the same pan, we add some sausages that we cut into pieces of about 6-7 cm, after which we remove the casing. We fry them until they turn golden and release their delicious flavors.

After the sausages are fried, we take them out of the pan and place them next to the ribs. In the remaining oil, we add an onion that we cut into quarters. We sauté it, stirring occasionally, until it becomes translucent and develops a sweet aroma. When the onion is ready, we put the ribs and fried sausages back into the pan. It's time to add 2 liters of meat broth, which we can prepare at home or use a broth concentrate for an intense flavor.

Fresh tomatoes, peeled and diced, are the next addition. They will bring a note of acidity and freshness to the dish. We also add finely chopped parsley, a sprig of thyme, freshly ground pepper, and if we want a bit of heat, we add chili pepper, which is optional. We must not forget the sliced mushrooms, which will add a special texture and umami flavor to the dish.

Once all the ingredients are in the pot, we cover it with a lid and place the pot in the oven, setting the temperature to 180 degrees Celsius. The cooking time is about 1 hour and 30 minutes. It is important to check the meat from time to time; if it is not tender enough, we can leave it in the oven longer, adding a bit more broth or water so that it does not dry out.

In the end, the dish is served hot, alongside creamy mashed potatoes or a side of rice. Pickles are an excellent accompaniment, bringing a contrast of textures and flavors. This dish is not only tasty but also a great way to bring the family together around the table, turning any lunch or dinner into a true feast of flavor.
