Mexican Pancakes
To prepare a delicious dish of pancakes filled with chicken and a Mexican mix, we start by ensuring we have all the ingredients on hand. We will need a large onion, which will be diced into small cubes, and a fresh chicken breast, which we will also cut into appropriately sized cubes. In a heated pan, we add a little oil and, once it is hot, we add the diced onion. We let it fry over medium heat, stirring occasionally, until it becomes golden and soft. This will add a special flavor to our dish.
After the onion is fried, we add the chicken breast cubes. We let the meat cook, stirring it to brown evenly. It is important to ensure that the chicken is well cooked to avoid issues related to undercooking. Once the chicken is cooked, we add the Mexican mix, which can contain beans, corn, and peppers, all previously cooked. This ingredient will add a colorful touch and a vibrant taste to the dish.
Once the mixture has cooled completely, we move on to the next ingredients. We add tomato paste, which will provide a rich taste and a creamy texture, along with the beaten eggs, which will bind all the ingredients together. We season the mixture with salt, pepper, and, if desired, a little paprika or other preferred spices.
Now, it is time to fill the pancakes. We take the previously prepared pancakes and fill them with our delicious mixture. After filling each pancake, we focus on the sauce. We prepare a sauce from sour cream, chopped garlic, and salt, which we mix well to achieve a smooth consistency.
Another important step is to grease the bottom of a Jena dish with this sour cream sauce to prevent the pancakes from sticking. We then place half of the pancakes in the dish, spread a little sour cream sauce on them, and sprinkle half of the grated cheese. We continue with another layer of pancakes, which we grease in the same way, adding the remaining cheese on top.
The dish is placed in a preheated oven at 180 degrees Celsius and left to bake for about 15 minutes, until the cheese melts and becomes golden. Finally, we take the dish out of the oven, let it cool slightly, and then serve the pancakes hot, garnished with the remaining sour cream sauce, if desired. This dish is perfect for a family dinner or to impress guests, being both tasty and filling.
