METHOD OF PREPARATION: The peeled onion and well-washed parsley are placed in a blender (food processor) and left until finely chopped. Meanwhile, we prepare the rest of the ingredients: we peel the carrot and bell pepper, which we will cut into small cubes. These vegetables will add not only a delicious taste but also a vibrant color to our dish.

In a large skillet, we heat a little olive oil over medium heat. Once the oil is hot, we add the onion and parsley mixture, allowing them to sauté for about 3-4 minutes, until the onion becomes translucent and releases its flavors. We then add the carrot and bell pepper, stirring constantly to ensure they cook evenly. These vegetables will add a pleasant texture and a sweet taste that will balance the dish.

After the vegetables have softened, it is time to add the spices. We sprinkle salt, pepper, and, if we want a touch of spiciness, a pinch of paprika. We mix well to distribute the spices evenly. After about 5 minutes, when the vegetables are cooked, we can add the meat cut into cubes. We choose chicken or pork, depending on our preferences, and let it brown, stirring occasionally.

When the meat is well browned on all sides, we add a cup of water or chicken broth, covering the skillet with a lid. We let everything simmer on low heat for 15-20 minutes, so the flavors blend perfectly. If we want to add extra flavor, we can include some herbs, such as oregano or thyme.

After the time has passed, we check the consistency of the sauce. If it is too thin, we can leave the lid uncovered and let it reduce for a few minutes. Once the sauce has reached the desired consistency, we taste and adjust the spices to our liking. The dish is now ready to be served. We can place it on a bed of rice or pasta, garnishing with a little freshly chopped parsley.
