To prepare a delicious duck, the secret lies in how we combine the spices and the cooking technique. Start by preparing a mixture of salt and pepper. It is important that the salt is well heated, even roasted, to enhance its flavor. Place the salt in a container that you can use on the stove over moderate heat. Using a wooden spoon, constantly stir the salt to prevent it from burning. After a few minutes, when the salt turns slightly golden and changes its aroma, add freshly ground pepper. This mixture will add an intensity to the duck meat.

After the salt and pepper mixture has been well combined, take the duck and wash it under a stream of cold water, then dry it with a kitchen towel. This step is essential to ensure that the skin becomes crispy during cooking. Moisture will prevent the skin from browning as we desire. Next, take the salt and pepper mixture and rub the duck inside and out, making sure every corner is evenly coated.
