To prepare a culinary delight that will please everyone, we start by taking care of the vegetables that will form the base of this dish. In the first phase, we carefully clean the onion, peppers, and garlic, making sure to remove all impurities. Once the vegetables are clean, we wash them well under cold running water to remove any traces of pesticides or dirt. After washing, we cut the onion into small cubes, the peppers into thin strips, and crush or finely chop the garlic to release its aroma.

In a large pan, we heat the olive oil, which will add a special flavor to our dish. Once the oil is well heated, we add the chopped onion, peppers, and garlic. We stir constantly so that the vegetables sauté evenly until the onion becomes glassy and the flavors combine wonderfully. It is time to deal with the eggplants. We wash them and cut them into small cubes, ensuring that their size is similar to that of the other vegetables.

After the onion, peppers, and garlic have sautéed for a few minutes, we add the eggplant cubes to the pan, continuing to stir. The eggplants need a little time to soften and release their juice, so we let everything sauté for a few minutes. The next step involves the zucchini, which we wash and chop finely. Once the zucchini are ready, we add them to the pan and stir again, allowing them to sauté together with the other vegetables.

After achieving a uniform composition, it is time to add the tomato sauce. We add salt, pepper, and a teaspoon of sugar to balance the acidity of the sauce, all adjusted to taste. We mix well, ensuring that each vegetable is coated with sauce. We cover the pan with a lid and let the dish simmer on low heat so that the flavors meld, and the sauce reduces and thickens.

After about 20-30 minutes, we check the consistency of the sauce and the texture of the vegetables. They should be soft but not completely broken down, still retaining a slight firmness. When everything is ready, we remove the pan from the heat and prepare to serve this flavorful dish. Enjoy your meal!
