Chicken breast potato stew
We wash the chicken under a stream of cold water, making sure to remove any impurities. After cleaning it, we pat it dry with a kitchen towel to absorb the excess water, then cut it into suitable pieces so that it cooks evenly. We slice the green onion into rounds, making sure to use both the white and green parts to add extra flavor to the dish. The sweet and aromatic bell pepper is cleaned of seeds and cut into thin strips, while the carrot is peeled and cut into small pieces so that it softens quickly during cooking.
In a large frying pan, we heat the oil over medium heat. When the oil is hot, we add the chicken pieces and sauté them lightly until they turn golden on all sides. Then, we add the prepared vegetables: green onion, bell pepper, and carrot. We carefully stir them and let them sweat for about 3 minutes to release their flavors and combine perfectly with the meat. After this time, we cover everything with warm water, season with salt, pepper, and a teaspoon of sweet paprika, which will add an irresistible aroma to the dish. We put a lid on the pan and let it simmer on low heat for 15-20 minutes so that the chicken becomes tender and juicy.
Meanwhile, we peel the potatoes, cutting them into 6 or 8 pieces, depending on their size. When the meat is almost done, we add the potatoes to the stew, mixing well to combine with the other ingredients. If necessary, we add a little hot water to maintain the desired consistency of the sauce. After about 10 minutes, when the potatoes have started to soften, we incorporate the peeled tomatoes, which we chop finely. We let the stew boil, stirring occasionally, until the potatoes and meat are fully cooked.
Once all the ingredients are cooked, we add the tomato paste and finely chopped fresh dill, giving it one last stir. We let it simmer for another 3-4 minutes for the flavors to blend harmoniously. We serve this delicious stew hot, alongside assorted pickles that will perfectly complement the dish's taste. This recipe is not only hearty but also colorful and aromatic, making it ideal for a family meal or with friends.
