Fish brine is a traditional Romanian dish, full of unmistakable flavors and tastes. Start your culinary adventure now and discover how to prepare delicious baked fish, served with a savory brine.

Ingredients:
- 1 kg fish (preferably freshwater fish like carp, trout, or catfish)
- 2 tablespoons salt
- 2 large onions
- 2 bell peppers (red and green for a color contrast)
- 4 garlic cloves
- 200 ml water
- 100 ml olive oil (or sunflower oil)
- 1 teaspoon peppercorns
- 1 bay leaf
- 1 bunch of fresh parsley
- 1 lemon (for serving)

Preparation:
1. Preparing the fish: Start by washing the fish well under cold running water. Cut it into pieces about 3-4 cm each, then sprinkle salt evenly over each piece. Let the fish marinate for 15-20 minutes to absorb the salt's flavor.

2. Frying the fish: Heat the oil in a large skillet over medium heat. Add the fish pieces and fry them gently for 3-4 minutes on each side until golden. Ensure not to overcrowd the skillet for even frying. After frying, place the fish on a paper towel to absorb excess oil.

3. Preparing the vegetables: In the same skillet, add the julienned onion and sliced bell pepper, sautéing over medium heat. Stir occasionally until the vegetables soften, about 5-7 minutes. Add the minced garlic and continue to sauté for another 2 minutes until the garlic becomes fragrant.

4. Assembling the dish: In a baking dish, layer a mixture of vegetables followed by the fried fish pieces. Pour water over the fish, add the peppercorns and bay leaf. Cover the dish with aluminum foil to retain moisture.

5. Baking: Preheat the oven to 180°C. Place the dish in the oven and bake for 30-40 minutes. Remove the foil in the last 10 minutes of baking to allow the fish to become slightly crispy.

6. Serving: Once the dish is ready, sprinkle fresh chopped parsley on top for added freshness. Serve the baked fish brine with lemon slices to provide a delicious contrast between the salty flavors of the fish and the acidity of the lemon.

Practical tips:
- Choose fresh fish for the best results. Check the eyes, which should be clear, and the gills, which should be red.
- If you want a spicy version, you can add chili peppers to the vegetable mix.
- Instead of water, you can use fish broth for a more intense flavor.
- Serving alongside freshly made polenta is a traditional choice that perfectly complements this dish.

Enjoy this simple and tasty dish, ideal for a family dinner or to impress your guests!
