Although it may seem like a tedious recipe, with a bit of patience and passion, you will succeed in preparing them perfectly!
Preparation time: 30 minutes
Cooking time: 30 minutes
Total time: 60 minutes
Number of servings: 18 arancini
Necessary ingredients
- 2 cups of round-grain rice (ideal for maintaining shape)
- 6 cups of chicken broth (or water, if you don’t have broth on hand)
- 500 g minced meat (a mix of pork and beef is ideal)
- 2 medium onions, finely chopped
- 1 green bell pepper, cut into thin strips
- 4 tablespoons of oil (for sautéing)
- 2 tablespoons of tomato paste
- A bunch of fresh parsley, finely chopped
- Salt and ground pepper, to taste
- 150 g flour
- 3 large eggs, beaten
- 150 g breadcrumbs
- 1 liter of oil for frying
Step by step: Cooking arancini
1. Preparing the rice
Let’s start with the rice! Put the 6 cups of chicken broth in a large pot and bring it to a boil. When the broth starts to boil, add the 2 cups of rice. Let it simmer until the rice absorbs all the liquid. This step is essential for achieving well-cooked, sticky rice, perfect for shaping arancini. Once done, let it cool.
2. Preparing the filling
In another pot, add the 4 tablespoons of oil and sauté the chopped onions along with the strips of bell pepper over medium heat. When the onion becomes translucent, add the minced meat. Cook the mixture until the meat changes color and the liquid reduces by half. Then, incorporate the tomato paste, salt, pepper, and chopped parsley. Let it cook for a few more minutes, then remove from heat and let the filling cool.
3. Shaping the arancini
After the rice and filling have cooled (it’s recommended to let them chill in the fridge overnight to firm up), it’s time to shape the arancini. Wet your hands and take a spoonful of rice. Flatten it in your palm and add a spoonful of filling. Place another spoonful of rice on top and form a ball, ensuring the filling is completely covered. Arrange the shaped balls on a tray moistened with water. Leave them in the fridge for an hour to firm up.
4. Preparing to fry
While the balls are in the fridge, set up your frying station. In three separate bowls, prepare the flour, beaten eggs, and breadcrumbs. In a deep pot, heat the oil over medium heat. It’s important to have enough oil to fry the balls evenly.
5. Frying the arancini
Once the oil is hot, take each rice ball and coat it in flour, beaten egg, and then breadcrumbs. Fry 3 balls at a time to avoid overcrowding. Pay attention to the frying time! Arancini need about 3-4 minutes on each side until they become golden and crispy. Remove them onto paper towels to absorb excess oil.
Serving
Arancini are best served hot, straight from the pan. You can accompany them with a spicy pepper jam or a flavorful tomato sauce. This combination will add a note of freshness and flavor to your dish. If you have leftover arancini, don’t worry! They keep well in the fridge and can be reheated the next day.
Chef's tip
If you want to add a twist to the recipe, try including mozzarella cheese in the filling. It will melt inside, bringing a creamy and delicious texture. You can also experiment with different types of meat or vegetables, adapting the recipe to your preferences.
Nutritional benefits
Although arancini are fried, the ingredients used offer a good combination of protein from the meat and carbohydrates from the rice. The parsley adds essential vitamins and minerals. However, considering the cooking method, I advise serving arancini with a fresh green salad to balance the meal.
