Necessary ingredients:
For the vanilla layer:
- 2 eggs
- 2 tablespoons sugar
- 2 tablespoons flour
- ½ packet baking powder
For the cocoa layer:
- 2 eggs
- 2 tablespoons sugar
- 1-2 tablespoons cocoa
- 2 tablespoons flour
- ½ packet baking powder
For the puddings:
- 1 packet chocolate pudding
- 1 packet vanilla pudding
- 1 liter milk for puddings
For assembly:
- 100 g raisins
- 100-150 ml milk for soaking
- 1 teaspoon rum essence
- 1-2 tablespoons sugar (to taste)
- 100 g ground walnuts
- Apricot jam (to taste)
- 1 box of liquid cream
- Chocolate topping (for decoration)
Preparation:
Step 1: Preparing the layers
We start with the vanilla layer. Separate the two eggs, placing the yolks in a bowl. Add the 2 tablespoons of sugar and mix well using a whisk or mixer until you achieve a smooth, slightly frothy mixture. Now, beat the egg whites in another bowl until they form stiff peaks. The secret here is to ensure the bowl is clean and free of grease, so the egg whites will whip better.
Once the egg whites are ready, add them to the yolk mixture, followed by 2 tablespoons of flour and ½ packet of baking powder. Gently fold in with the back of a spoon, being careful not to deflate the egg whites. Pour the batter into a baking pan lined with flour or baking paper and bake in a preheated oven at 180°C for about 20 minutes, or until it passes the toothpick test.
Step 2: Preparing the second layer
Repeat the same process for the cocoa layer, separating the eggs again. Mix the yolks with 2 tablespoons of sugar and 1-2 tablespoons of cocoa. Add the beaten egg whites, 2 tablespoons of flour, and ½ packet of baking powder. Pour the batter into another pan and bake at the same temperature for another 20 minutes. Allow the layers to cool completely.
Step 3: Preparing the puddings
Now that we have the layers, it’s time to focus on the puddings. Follow the instructions on the package to prepare the chocolate and vanilla puddings. Make sure to let them cool.
While the puddings are cooling, prepare the raisins. Soak them in warm water for 10 minutes to hydrate. For soaking, mix 100-150 ml of milk with the rum essence and 1-2 tablespoons of sugar, to taste. This mixture will add an extra flavor to your dessert.
Step 4: Assembly
Once the layers have cooled, we begin the assembly. Place the first vanilla layer in a serving dish. Soak it well with the milk mixture, then spread a thin layer of apricot jam. Add the vanilla pudding, half of the raisins, and sprinkle the ground walnuts. This mixture will provide a rich flavor and interesting texture.
On top of all this, place the second layer (the cocoa one), soak it again, spread with jam, and add the chocolate pudding, the remaining raisins, and walnuts. Cover everything with plastic wrap and let the cake rest in the refrigerator overnight to meld the flavors.
Step 5: Serving
The next day, whip the cream until firm. Using a ladle, scoop out from the cake and decorate with abundant whipped cream. Add chocolate topping for an attractive look and intense flavor.
Useful tips:
- Use fresh eggs for better egg white foam.
- If you want a stronger rum flavor, add a few drops to the puddings.
- You can substitute raisins with other dried fruits, such as apricots or cranberries, for a personalized version.
