Little Cabbage Rolls with Walnuts in Puff Pastry

Welcome to our kitchen, where the magic of cooking comes to life! Today, we will prepare a delicious and easy-to-make recipe: little cabbage rolls with walnuts in puff pastry. This recipe combines the crispy texture of puff pastry with the rich walnut filling, bringing a touch of sweetness and flavor in every bite. Whether you make them for a special occasion or just to treat yourself, these little rolls are always a perfect choice.

A Bit of History

Recipes with puff pastry filled with various ingredients have a long tradition, being found in many culinary cultures. Typically, these dishes are associated with desserts, but today we will explore a less common way to fill them, using walnuts and a fragrant mix. This recipe reflects the versatility of puff pastry and the creativity of the cook.

Preparation Time

- Preparation time: 30 minutes
- Baking time: 30 minutes
- Total time: 1 hour
- Number of servings: 8-10 little rolls

Ingredients

For the little rolls:
- 1 package of puff pastry (approximately 400 g)
- 150 g ground walnuts
- 150 g walnut and cinnamon mix (a product from Hungary, but you can also use cinnamon and sugar separately)
- 100 g melted butter (for a rich and aromatic taste)

For the syrup:
- 600 ml water
- 300 g sugar
- 1 tablespoon honey (for natural sweetness)
- 1 tablespoon lemon juice (for a touch of acidity)
- Vanilla essence (to taste, for an inviting aroma)

Preparation Technique

1. Preparing the filling:
In a bowl, combine the ground walnuts with the walnut and cinnamon mix. This combination will give you a fragrant and delicious filling. If you don't have the mentioned mix, you can achieve the same result using cinnamon and sugar.

2. Preparing the puff pastry:
Cut the puff pastry sheets into 4 equal parts. It is important to work quickly to prevent the sheets from drying out. Place them on a platter and cover them with a damp towel or plastic wrap to keep them moist.

3. Assembling the little rolls:
Take two sheets of puff pastry and brush each sheet with melted butter. Sprinkle the walnut mixture on each sheet. Place a skewer stick at the bottom edge of the sheets and roll gently, squeezing the sides without tearing the sheet. If you're a beginner, don't worry if the first rolls don't turn out perfectly; practice will help you!

4. Baking:
Place the little rolls in a greased and lined baking tray. Preheat the oven to 200 degrees Celsius and bake the little rolls for 30 minutes or until golden and crispy.

5. Preparing the syrup:
While the little rolls are in the oven, prepare the syrup. In a saucepan, add water, sugar, honey, and lemon juice. Boil over medium heat, stirring occasionally, for about 8 minutes from the first boil. Once the syrup has thickened slightly, add the vanilla essence.

6. Finalizing the dish:
When the little rolls are ready, take them out of the oven and pour the hot syrup over them. Let them cool to room temperature, then refrigerate to allow the syrup to set.

Serving Suggestions

These little walnut rolls are excellent served cold, but they can also be warmed slightly in the oven to bring back that crispy texture. You can serve them with a dollop of sour cream or Greek yogurt for a delicious contrast. They also pair wonderfully with a fragrant coffee or fruit tea, turning them into a perfect dessert for a relaxing afternoon.

Nutritional Benefits

Walnuts are an excellent source of omega-3 fatty acids, protein, and antioxidants. They also contribute to heart health and maintaining a healthy weight. By using natural ingredients like honey and lemon juice, you reduce the amount of refined sugar in the recipe, making this dessert healthier and more balanced.

Personal Note

This recipe is one of my favorites because it brings together tradition and innovation in the kitchen. Each bite is an explosion of flavors, and the process of making them becomes a pleasant and relaxing activity. I encourage you to play with the ingredients and put your personal touch on the recipe. Enjoy your meal!

I prepared the nuts by mixing ground walnuts with the walnut and cinnamon mixture that I initially bought thinking it was ground walnuts, but when I was about to start, I saw that it actually contained something else... I deduced that besides walnuts, it might be cinnamon and sugar (if someone who knows the language can help me... thank you in advance). Not having anywhere to buy walnuts, I combined the walnuts I had left with this mixture. And I was not wrong at all! Let's go back: I cut the pastry sheets into 4 equal parts. I worked with one block at a time, keeping the rest in the fridge until it was their turn. For the roll, I used two sheets, individually brushed with melted butter. I sprinkled the walnut mixture on the sheet, placed the skewer, rolled it up, then tightened the sides gently without tearing the sheet (the first ones I kind of messed up), and removed the skewer. I proceeded this way until I finished all the sheets and filled a tray with rolls. The tray with rolls, which had been greased and lined with baking paper beforehand, I put in the preheated oven for about 30 minutes at 200 degrees. In the meantime, I made the syrup by boiling all the ingredients for 8 minutes from the first boil. When the rolls were ready, I poured the hot syrup over them and let them cool. Once they were completely cooled, I put them in the fridge.. (a few got lost along the way :))) Because I love you, I offer you each a roll.. but only because I love you! :) Enjoy your meal!
