- 400 g cottage cheese (15% fat)
- 125 g plain yogurt
- 100 g sugar
- Vanilla essence
- 1 packet of gelatin
- 200 g whipped cream

*For the jelly:*
- 700 g Fanta juice
- 2 packets of vanilla pudding
- Optional: sugar (if you prefer a sweeter jelly)

*For decoration:*
- Orange slices, chocolate, whipped cream, etc.

Preparation

1. Preparing the base:
Start by separating the eggs. Beat the egg whites with a pinch of salt using a mixer until foamy. Gradually add the sugar and vanilla sugar, continuing to mix until you achieve a whitish and glossy composition. This is the perfect base for a light and airy cake.

Add the egg yolks one at a time, mixing well after each addition. At this point, also add the vanilla and rum essences, as well as the melted butter. Continuing to mix will ensure perfect homogenization of the ingredients.

In another bowl, sift the flour, cornstarch, and baking powder. This is the secret to a fluffy base, so don’t skip this step! Slowly add the flour mixture to the egg composition, gently folding with a spatula until everything is well combined.

Prepare a round springform pan (26 cm) and line the bottom with baking paper, greasing the edges with a little oil. Pour the mixture into the pan and place it in the preheated oven at 180°C (medium heat). Bake for about 20 minutes, and when the base is done, test with a toothpick. If it comes out clean, the base is perfect!

After baking, remove the base from the oven and let it cool completely on a rack.

Put the saucepan back on the heat and let it boil for 1 minute, stirring continuously to achieve a thick consistency.

Let the jelly cool completely (you can use a bowl of cold water to speed up the process), then pour it evenly over the cheese cream.

5. Final cooling:
Cover the cake and let it chill in the refrigerator for about 4 hours, but ideally overnight. This step is essential for all the flavors to combine perfectly and for the jelly to set.

Serving and decorating:
Once the cake has fully set, it’s time to decorate! Use orange slices, grated chocolate, or whipped cream to give it an attractive appearance. This Fanta cake will surely be the star of the table!
