When it comes to desserts, few can match the charm and elegance of cream puffs. This dessert, with its light and airy texture, has won the hearts of many over time. It is said that cream puffs were created out of a desire to achieve the perfect dough, but they have certainly become much more than that. Today, I invite you to prepare these delicious cream-filled "doughnuts" with me, which can become the stars of any event.
Necessary ingredients:
*For the puffs:*
- 6 large eggs (at room temperature)
- 300 ml water
- 75 ml oil (preferably sunflower oil)
- 200 g flour (white wheat flour)
- 1 pinch of salt
- 1 pinch of sugar
*For the filling cream:*
- 4 large eggs
- 270 g sugar
- 200 g flour
- 750 ml milk (preferably whole)
- 1 vanilla essence (or a vanilla pod, if you want a more intense flavor)
*For decoration:*
- 200 g whipped cream
- powdered sugar for sprinkling
- fresh strawberries (optional, for a colorful look)
Step by step: Preparing the puffs
1. Boiling the base ingredients: In a medium-sized pot, add the water, oil, a pinch of salt, and a pinch of sugar. Place the pot over medium heat and wait for it to reach a boiling point. It is essential to ensure that the mixture is boiling well, as this will activate the gluten in the flour, helping the dough to puff up during baking.
2. Adding the flour: When the mixture has started to boil, add all the flour at once. Use a wooden spoon and mix vigorously. It is important to continue mixing for about 5 minutes until the dough becomes homogeneous and pulls away from the sides of the pot. This step is crucial for achieving successful puffs!
3. Cooling the dough: Once the dough has cooled slightly, transfer it to a large bowl. Let it cool completely (about 10-15 minutes). This step will prevent the eggs from coagulating when you add them.
4. Incorporating the eggs: Add the eggs one at a time, mixing well after each addition. Make sure each egg is fully incorporated before adding the next. The dough should become shiny and slightly dense.
5. Shaping the puffs: Transfer the dough into a pastry bag (or a plastic bag with a cut corner). On a baking sheet lined with parchment paper, form puffs the size of a walnut, leaving enough space between them to allow for expansion during baking.
6. Baking: Preheat the oven to 200°C (high heat) and place the tray with puffs inside. Bake for 20 minutes without opening the oven door, then reduce the temperature to 180°C and leave them for another 10 minutes. In the last 10 minutes, leave the oven door slightly ajar to allow steam to escape. This step will ensure a perfect, crispy, and airy texture.
7. Checking for doneness: Use a toothpick to check if the puffs are done. If the toothpick comes out clean, it means they are perfectly baked. Remove them from the oven and let them cool completely.
Preparing the delicious cream:
1. Beating the eggs: In a large bowl, beat the 4 eggs with the sugar and vanilla essence until you obtain a homogeneous and frothy mixture.
2. Incorporating the ingredients: Add the flour, mixing constantly to avoid lumps. Then, pour in the warm milk, continuing to mix.
3. Preparing the cream in a double boiler: Transfer the obtained mixture into a heat-resistant bowl (or a heatproof dish) and place it over a double boiler. Continue to stir until the cream thickens and you no longer taste the flour (about 10-15 minutes).
4. Cooling the cream: Once the cream has thickened, remove it from the heat and let it cool completely.
Filling the puffs:
1. Cutting the tops: After the puffs have cooled, use a sharp knife to cut the top off each puff.
2. Filling: Using a pipette or a pastry bag, fill each puff with the cooled cream. Make sure each puff is well filled.
3. Decorating: Add a layer of whipped cream on top of each puff and place the top back on. Sprinkle a little powdered sugar for an elegant look, and if desired, add some fresh strawberries for a pop of color and flavor.
Serving and helpful tips:
Cream-filled puffs are perfect to be served on any special occasion. They can be accompanied by a cup of coffee or fragrant tea, making them ideal for a weekend dessert or a party.
If you want to experiment, you can add various flavors to the cream, such as cocoa for a chocolate version or even coffee flavorings. You can also try replacing the whipped cream with melted chocolate glaze for a decadent touch.
