Apple and Ginger Cake
To prepare a delicious apple and ginger cake, we start by peeling the apples. It is important to choose fresh apples, preferably a more acidic variety, which will contrast perfectly with the sweetness of the sugar. After peeling the apples, we cut them into quarters, then each quarter is divided into halves, removing the core and seeds. Then, we cut the apples into uniformly sized cubes so that they bake evenly in the cake. To prevent oxidation, we squeeze lemon juice over the apple cubes and add the grated ginger; the spicy aroma of the ginger will enhance the flavor of the apples.
Next, we take care of preparing the baking pan. We generously grease a pan with butter, ensuring that the dough will not stick, and then we dust it with flour so that the cake can be easily removed after baking. It is time to preheat the oven to 180 °C, so it is ready to bake our cake.
In a large bowl, we use a mixer to combine the softened butter with the sugar. We mix until the sugar is almost completely melted and the mixture becomes smooth. Then, we add the eggs, one at a time, continuing to mix until we achieve a fluffy and airy foam. This step is essential to ensure a light and fluffy texture for the cake.
Once we have a well-mixed composition, we add the yogurt, which will provide moisture and a subtle taste. In another bowl, we mix the flour with the baking powder, and then we incorporate this mixture into the wet composition, using the mixer on low speed to avoid flour spilling all over the kitchen.
Once the mixture becomes homogeneous, we add the apple cubes and stir with a spoon, being careful not to crush the apples. We pour everything into the prepared pan and sprinkle the two tablespoons of sugar on top, which will caramelize beautifully during baking.
We place the pan in the preheated oven and let the cake bake at 180 °C for about an hour, but it is recommended to check from time to time, as the baking time may vary depending on the oven. The cake is ready when it is browned, golden, and passes the toothpick test — it should come out clean.
After the cake is baked, we let it cool in the pan for a few minutes, then we transfer it to a rack to cool completely. Before serving, we can dust it with powdered sugar for an elegant look. This apple and ginger cake is perfect to be enjoyed alongside a cup of tea or coffee, offering a moment of culinary indulgence.
Ingredients: 4 apples, 120g of cake flour, 200g of sugar + another 2 tablespoons, 100g of soft butter, 3 eggs, 125g of yogurt, 1/2 packet of baking powder, juice from 1 lemon, 1 piece of ginger root of 2 cm (even 3 depending on your taste), powdered sugar, a packet of vanilla sugar (optional, I use vanilla baking powder), butter and flour for greasing the pan.
