Delicious Cappuccino Muffin Recipe
If you are a coffee and pastry enthusiast, cappuccino muffins are a perfect choice for you! These fluffy and aromatic treats, enriched with instant coffee and chocolate chips, are ideal for breakfast or a sweet snack in the middle of the day. Plus, they are easy to make, even for beginners.
Preparation time: 15 minutes
Baking time: 20 minutes
Total time: 35 minutes
Number of servings: 12 muffins
Ingredients for muffins:
- 2 cups of flour
- ½ cup of melted butter (about 60 g)
- 1 cup of milk
- ¾ cup of sugar
- 1 teaspoon of cinnamon powder
- 2 ½ teaspoons of baking powder
- 2 tablespoons of instant coffee
- 1 egg
- ¾ cup of chocolate chips (or chopped dark chocolate)
- 1 teaspoon of vanilla extract
- a pinch of salt
Ingredients for coffee cream (optional):
- 150 g of fat cottage cheese
- 1 tablespoon of sugar
- ½ teaspoon of instant coffee
- 1 teaspoon of vanilla extract
- ¼ cup of chocolate chips
Step-by-step preparation:
1. Preparing the ingredients: Start by gathering all the necessary ingredients. It is important that the butter is melted in a double boiler to avoid burning. You can use dark chocolate instead of chocolate chips if you prefer a more intense flavor.
2. Mixing the dry ingredients: In a large bowl, combine the flour, baking powder, sugar, cinnamon, and salt. Mix well to ensure the ingredients are homogeneous.
3. Preparing the wet mixture: In another bowl, heat the milk and add the instant coffee, stirring until completely dissolved. Add the melted butter, egg, and vanilla extract. Mix the wet ingredients well to combine.
4. Combining the ingredients: Pour the wet mixture over the dry ingredients. Use a spatula or whisk to combine everything, being careful not to overmix. When the ingredients are just combined, add the chocolate chips.
5. Filling the molds: Preheat the oven to 190 degrees Celsius. Prepare the muffin molds by greasing them with oil or using special muffin papers. Pour the mixture into the molds, filling them about two-thirds full.
6. Baking: Place the muffins in the preheated oven and bake for 20 minutes. Test them with a toothpick: if it comes out slightly moist but not sticky, the muffins are done. A slightly cracked crust on top is a good sign!
7. Cooling: Once baked, remove the muffins from the oven and let them cool on a rack. They will be fluffy and delicious.
8. Preparing the coffee cream (optional): In a food processor or blender, combine the cottage cheese, sugar, instant coffee, vanilla extract, and chocolate chips. Blend well until you achieve a smooth cream. Place the cream in a covered container and keep it in the fridge until serving.
9. Serving: Serve the muffins warm or at room temperature, either plain or with a generous layer of coffee cream. They are perfect alongside a cup of freshly brewed coffee for a complete experience.
Personal suggestion: You can add chopped nuts or hazelnuts to the muffin mixture for an extra texture and flavor. Also, for a healthier version, you can replace ½ of the flour with whole wheat flour.
Enjoy these cappuccino muffins and let their enticing aroma carry you away! Perfect for any time of the day, these delicious treats are sure to become a favorite in your home.
Ingredients: For 12 muffins you need: 2 cups of flour, half a cup of melted butter (I think about 60 grams solid, although I did it by eye and got it right), 1 cup of milk, three-quarters cup of sugar, 1 teaspoon of cinnamon powder, 2 and a half teaspoons of baking powder, 2 tablespoons of instant coffee (that is, powder, not brewed), 1 egg, three-quarters of a cup of chocolate chips, vanilla essence, a pinch of salt. Optionally, you can also prepare a coffee cream to spread on the muffins. For this, you need: 150 grams of full-fat cottage cheese, 1 tablespoon of sugar, half a teaspoon of instant coffee, vanilla essence, a quarter cup of chocolate chips.
