Preparation time: 30 minutes
Baking time: 45 minutes
Total time: 1 hour and 15 minutes
Number of servings: 12

Ingredients:

*For the pink sponge:*
- 8 eggs
- 8 heaping tablespoons of flour
- 8 tablespoons of sugar
- 2-3 tablespoons of food coloring (depending on the desired intensity)

*For the white sponge:*
- 8 eggs
- 8 heaping tablespoons of flour
- 8 tablespoons of sugar

*For the third sponge (special or round shape):*
- 5 eggs
- 5 tablespoons of flour
- 5 tablespoons of sugar
- Food coloring (half of the mixture is colored, while the other half remains yellow)

*For the cream:*
- 500 ml liquid cream (Hulala)
- 250 g mascarpone (ideally 500 g, but can be adjusted)
- Powdered sugar, to taste
- 250 ml liquid cream (for decoration)

*For the syrup:*
- 200 ml water
- 5-6 tablespoons sugar
- 2 teaspoons vanilla essence

*For the fruits:*
- 500 g strawberries
- 2 bananas

Preparing the sponges:

1. Pink sponge:
- Start by preheating the oven to 180°C (375°F).
- Separate the egg whites from the yolks. Whip the egg whites until foamy with a mixer, gradually adding the sugar until you achieve a firm and glossy meringue.
- Gently fold in the yolks, one at a time, using a wooden spatula to avoid deflating the meringue.
- Gradually add the flour, mixing gently, and finally incorporate the food coloring, adjusting the amount for the desired intensity.
- Pour the mixture into a baking tray lined with parchment paper and bake for 25-30 minutes. Perform the toothpick test to ensure it is baked. Let it cool.

2. White sponge:
- Follow the same steps as for the pink sponge, but without food coloring. Bake in the same manner.

3. Third sponge:
- For the third sponge, mix the eggs with the sugar and flour, dividing the mixture into two parts. One part will be colored, while the other remains yellow. Bake in the same tray, placing the yellow sponge first and then the pink sponge on top.

Preparing the cream:

1. In a large bowl, whip the liquid cream until it becomes firm.
2. Gently fold in the mascarpone until homogeneous. Add powdered sugar to taste.
3. Divide the cream into two equal parts. In one part, add a puree of strawberries (about 10 mashed strawberries), and in the other part, a well-mashed banana.

Assembling the cake:

1. Place the pink sponge on a rectangular tray and generously soak it with the syrup made from boiled water and sugar.
2. Add sliced strawberries, then spread the strawberry cream on top.
3. Place the white sponge over the strawberry cream, soak it, and add the strawberry cream again.
4. Cover everything with the remaining 250 ml of liquid cream for a uniform and appealing appearance.

5. Cut the third sponge in half and place the first half on the cake. Soak it and add banana slices, followed by the banana cream. Finish with the second half of the sponge, soak it, add the banana cream, and cover with whipped cream.
6. Decorate the cake to your liking. You can use whole strawberries, banana slices, grated chocolate, or even edible flowers for an elegant look.

Useful tips:
- Make sure all ingredients are at room temperature for a uniform mixture.
- Use a silicone spatula to gently mix the ingredients to avoid losing air from the meringue.
- The cake can be prepared a day in advance, allowing the flavors to blend, which will enhance the final taste.
- Substitute strawberries with other seasonal fruits, such as peaches or raspberries, to vary the flavors.

Nutritional benefits:
The Raluca cake contains eggs, which are an excellent source of protein and essential nutrients. Strawberries are rich in antioxidants, vitamins, and minerals, while bananas provide potassium and fiber. This dessert is a healthier choice compared to heavier cakes, thanks to the fresh fruits and light cream.

Frequently asked questions:
1. Can I use other types of cream?

2. How can I keep the cake fresh?
- Store it in an airtight container in the refrigerator, and to prevent drying out, wrap it in plastic wrap.

3. What drinks pair well with this cake?
- The Raluca cake pairs perfectly with a fruit tea or a glass of fresh lemonade. Additionally, a sweet wine or prosecco could add an elegant touch.
