Total preparation time: 1 hour 30 minutes
Preparation time: 30 minutes
Baking time: 45 minutes
Number of servings: 12

Ingredients

For the pastry:
- 1 package of phyllo dough (very thin, like baklava)
- 300 g ground nuts
- 1 cup breadcrumbs
- 2 tablespoons sugar
- 1 tablespoon ground cinnamon
- 200 g butter (for a stick of butter, leave it at room temperature to melt easily)

For the syrup:
- 3 cups (coffee cups) sugar
- 2 and a half cups water
- Zest of one orange
- 2-3 cloves

Preparation

Step 1: Preparing the baking pan
Start by greasing a baking pan (preferably medium-sized) with melted butter, ensuring that all corners are well covered. This step is essential to prevent the pastry from sticking to the pan and to provide a crunchy exterior texture.

Step 2: Layering the phyllo dough
1. Place the first sheet of phyllo dough in the pan and generously brush it with butter.
2. Repeat this process with 5 more sheets, brushing each sheet with butter, making sure they overlap evenly. Do not apply butter to the last sheet.

Step 3: Preparing the filling
In a bowl, mix the ground nuts, breadcrumbs, sugar, and cinnamon. This mixture will add incredible flavor to the pastry. The nuts provide a crunchy texture, while the cinnamon adds a warm and comforting note.

Step 4: Filling layer
1. Using a spoon, evenly distribute the nut mixture over the sixth sheet.
2. Cover with another sheet of phyllo dough, brush it with butter, then add another one, which will also be brushed with butter. Now, add the filling again.
3. Repeat this process (two buttered sheets, one unbuttered) until the filling is finished. It is important to keep the last 3 sheets for use at the end.

Step 5: Finishing the pastry
1. Place the remaining three sheets on top of the pastry, brushing each sheet with butter.
2. Fold the edges of the sheets that extend beyond the pan, ensuring the pastry is well sealed. This is the time to let the pastry rest a bit.

Step 6: Cutting and preparing the syrup
1. Use a sharp knife to cut the pastry into squares or diamonds, without cutting all the way to the bottom.
2. For the syrup, place the sugar, water, orange zest, and cloves in a pot and let it boil for about 10 minutes. The syrup should become slightly viscous.

Step 7: Baking the pastry
1. Preheat the oven to 170°C.
2. Place the pastry in the preheated oven and bake for about 45 minutes or until golden and crispy.

Step 8: Adding the syrup
After the pastry has completely cooled, pour the syrup over it, ensuring each piece is well soaked. This step will add moisture and sweetness to the pastry.

Useful tips
- Ingredients: Choose fresh nuts for a more intense flavor. If you want an extra hint of flavor, you can lightly toast the nuts before grinding them.
- Butter: Use high-quality butter for a better taste. Clarified butter is an excellent option as it has a higher smoke point.
- Serving: The pastry can be served plain or alongside a scoop of vanilla ice cream or a caramel sauce for a contrast of textures and flavors.
- Variations: Experiment with other nuts, such as almonds or pistachios, to add a different flavor. You can also add raisins or dried cranberries to the filling for a touch of acidity.

Nutritional benefits
This pastry is a good source of protein and healthy fats due to the nuts, and cinnamon brings antioxidant benefits. However, given the amount of sugar and butter, it is best enjoyed in moderation.

Frequently asked questions
- Can I use frozen phyllo dough? Yes, make sure to fully thaw it before use to avoid tearing.
- How can I store the pastry? It can be stored in an airtight container at room temperature for a few days. For a longer duration, you can freeze the pastry.

Enjoy every piece of this delicious dessert, which will bring a touch of joy to your home! Bon appétit!
