White chocolate cupcakes
To prepare some delicious cupcakes, we start by making the base mixture. In a large bowl, we add the softened butter, vanilla sugar, and regular sugar. It is important for the butter to be at room temperature to incorporate more easily. We mix the ingredients at medium speed until we obtain a smooth and fluffy mixture. This process will take about 3-4 minutes. Once we have achieved a creamy texture, we add the eggs one at a time, continuing to mix after each addition. This step is essential to ensure good aeration of the mixture, which will help in making fluffy cupcakes.
After incorporating all the eggs, we proceed to add the vanilla essence, which will provide a pleasant aroma. We continue mixing, and then we start adding the flour. It is recommended to sift the flour to eliminate any lumps and achieve a fine texture. We sift in one tablespoon of flour at a time, mixing well after each addition. When we have incorporated about half of the flour, we add a little milk to help with the homogenization.
After integrating the milk, we sift in the remaining flour and add the salt and baking powder. We carefully mix and pour in the rest of the milk, continuing to mix until we obtain a uniform and fluid mixture. Now, we take a cupcake tray and place the baking cups. We fill each cup with two tablespoons of batter, ensuring there is enough space for rising during baking. Then, we place the tray in the preheated oven at 180 degrees Celsius and let it bake for 15-20 minutes. It is very important not to open the oven door in the first 10 minutes to prevent cold air from entering.
In the meantime, we prepare the ganache cream. We cut the chocolate into small pieces for easier melting. In a small pot, we put 100 ml of liquid cream and heat it over medium heat. When the cream starts to boil, we remove it from the heat and add the chocolate pieces, stirring continuously. It is important not to let the chocolate boil, as this could alter the texture. We stir until the chocolate is completely melted and the mixture becomes smooth. Once the ganache is ready, we let it cool in the fridge to thicken slightly.
After the resting time has passed, we take the ganache out of the fridge and whip it for a few minutes until it becomes a light and airy cream. We leave it in the fridge for another 5-6 minutes to firm up a bit more. Then, using a piping bag, we decorate the cooled cupcakes. They will be not only delicious but also very attractive, perfect for any occasion. Enjoy them with pleasure!
